TIP FOR THINNEST CHIPS: line a tortilla press with plastic (as if you were about to make tortillas). Roll the dough into tiny marbles. Put the marbles (unfrozen) into the press. Press, turn the plastic 180 degrees, press a second time. Freeze them once they're formed. My food processor is like yours and I didn't like them thick - so I devised this method and it works a treat! I also add a few drops of "OOOFlavors Mashed Potato Flavored Liquid Concentrate Unsweetened" to the water before I mix them up. The smell is phenomenal. Lovely content, Wesley. Keep up the good work!

Except people i think including Steve (i LOVE Steve and how he does actual testing changing tiny variables to work out the best version of each recipe)anyway steve said he put in like 35 drops and the fries didnt taste ANY different. Keto focus uses tiny additions like that to make it “her” recipe when jts not even an improvement. Its gross.
I have made this recipe with a mandolin slicer and it worked really well! I preferred it over my food processor. I also separated them by making several flavors too! This is a great recipe from Heavenly Fan!
Since I went keto I have been jonesing for Stacy's pita chips and crisps, which I used to consume by the bag VERY often. These look like a lot of work, but may be worth it for that crunch! Thanks, Wes!

When you said Melba toast I could taste it. Even though were cut thick I see Potato Skins. Topped with chili, cheese, bacon, chicken salad, etc. Still looked great.

A flavoring tip, for that zingy taste on the tongue that you get from Doritos style or vinegar chips, add a pinch of baking soda and a pinch of ascorbic acid to your spice mix. It has definitely spiced up Keto chips for me :)
I just wanted to say that I think you are awesome. I started watching your videos when I started keto a few years ago. I did make these chips and tortilla chips after you did the french fry taste test. When I went to her videos, she mentioned the chips...and my husband is always asking me to make tortilla chips so that's what I did. I did half 'potato' and half tortilla and baked them all. I thought they would pass for real potato chips. I brushed them with oil and seasoned them before baking, and flipped halfway through. I never did make the french fries :( but the chips are on the block for me to make again this summer.

Many years ago I had a cheapy meat clever. I could slice a potato so thin you could almost see through it. I don't know how that would cut the frozen flour but any meat clever in your kitchen might be worth trying for thin slices. Being a senior who likes retro kitchen stuff I have two slicers from the sixties. One is adjustable and has a sliding bar similar to a mandolin. The other is a rotary slicer with an assortment of blades that will slice pretty quickly and thinly.
@@almostoily7541 The mandolin slicer (dialamatic) has the waffle blade. It will cut wavy chips by one cut, or waffle chips by turning the wavy cut potato by 90 degrees and slicing it again. It'll also make wavy french fries by how you slice the potato. I think both slicers were sold by Ron Popeil.
Wes...I have a 1 mm thick slicing blade for my Cuisinart and used it when I made them. They were good fried (didn't try baked) but didn't seem to stay crispy when stored in airtight container. I now have desiccant packets I can add to containers. I think that will make the difference so going to try this recipe again.
To keep things from blowing around in the air fryer, I put the metal rack that came with my instapot over them and they stay put. Any kind of rack like that would solve that problem.

They look good..you asked if anybody recommended any other chip(crisps) recipes. Ketogenic woman has a good recipe which is baked and I think then dehydrated. But I made them baked and then turned the oven down and they were great. Sorry, I don’t know the exact link as she has so many ( amazing) recipes.

Ketofocus does a "potato chip" using Jicama root. Looks good and apparently is ok on keto. Love to hear your thoughts on that recipe. Thanks for all your hard work. Love your videos.
Might be good to roll them out between parchment really thin (1/8"-), and cut with a roller, if you're fine with square chips, or a cookie cutter. Freeze, then fry or bake.
First, we are twinsies with our purple Thermapen thermometers LOL. And then, as you were making those I thought, damn that looks like it could be Melba toast replacements! I could see adding some everything bagel seasonings to the mix and then making (or buying) some pimento cheese to put on there... oh yeah! Snacky snack time baby!

@@pinehillart it *is* weirdly sweet, but with judicious application of sea salt, it can be balanced. Real potatoes have starch rather than sugar/sweetener, of course, so it's not a perfect analog, but it definitely bolstered my au gratin turnips. 🤷♀️

I feel like you could roll them out super thin in batches with a rolling pin, freeze the sheet, then cut them out with whatever shaped cookie cutter you wanted and that would maybe be the easiest way?
Better yet maybe would be to cut it in slices then quickly roll it thinner with a rolling pin. I suspect that rolling it out into a large float sheet could make it difficult to keep from falling apart.

Comes out much better with just coconut flour is xanthan gum and I looked put a little bit of Parmesan cheese in the mix 3 tbsp of Parmesan cheese 7 tablespoons of hot water. One-time mix it up in the ball I put it in the freezer once it's nice and hard I cut it on my meat cutter
With the added thickness, it makes it more like a cracker, which you could dress up with different toppings like cream cheese, salmon, dill, etc. or you could roll them flat and thin and cut them or use a decretive cookie cutter for the holidays. More work, but it would be cute.
I like watching these videos even though I can't have them. I am diabetic and also have GERD and I used to try to make these, they were good, but I found out soon that these alternative sweeteners really upset my stomach and cause gas issues. I do find these videos interesting though and are probably really good for people other than me 🤣 Godspeed to everyone that can enjoy these treats!

Cocoa powder would make them chocolate….add some chocolate chips too. Gardetto’s predominant flavors are rye and garlic…might be interesting with some cocoa tho!!
Just a thought I have just found this and THANK YOU for the trying recipes and combing recipes. A recipe comparision just curious you can use microwave and paper thin potat[es for chips which is too much cards Is there anothe vegatable that can be cut paper thin and microwaved that is a low carb option instead of potateos. I also was watching taco shell battle I was think to use a pasta drying rack to bend the shells. Have you tried that??
Since I'm a recovered pre-diabetic and also hypertensive, I have to watch my salt and fat. I make egg white chips as my substitute. There are many recipes online and there are Quavos brand bagged chips also.

I used to work in a butcher shop in Augusta GA and we made homemade pimento cheese spread and we used to sample it on there's southern homemade melba toast at a lady used to make and we buy it from her. Oh so on board for melba toast with just butter with a salad. I have the same Cuisanart and it befuddles me too from time to time

Comes out much better with just coconut flour is xanthan gum and I looked put a little bit of Parmesan cheese in the mix 3 tbsp of Parmesan cheese 7 tablespoons of hot water. One-time mix it up in the ball I put it in the freezer once it's nice and hard I cut it on my meat cutter

With the added thickness, it makes it more like a cracker, which you could dress up with different toppings like cream cheese, salmon, dill, etc. or you could roll them flat and thin and cut them or use a decretive cookie cutter for the holidays. More work, but it would be cute.
I like watching these videos even though I can't have them. I am diabetic and also have GERD and I used to try to make these, they were good, but I found out soon that these alternative sweeteners really upset my stomach and cause gas issues. I do find these videos interesting though and are probably really good for people other than me 🤣 Godspeed to everyone that can enjoy these treats!
There are no sweeteners in these. Why would this recipe bother your gerd? I got rid of mine when I went to keto.

I used my Mandolin because my food processor did not cut them right, but the mandolin they were too think.....tastes good though but not like a chip.

You could use a very small ice cream scooper and put them on parch paper and squish them, throw them in the freezer then fry them.
I recently made a knock off potatoes salad with diakon radish, I wonder if u could make chips with that too by slicing then fryimg/ baking them? I think I might try soon

The brown chips are rye
Cocoa powder would make them chocolate….add some chocolate chips too. Gardetto’s predominant flavors are rye and garlic…might be interesting with some cocoa tho!!

Just a thought I have just found this and THANK YOU for the trying recipes and combing recipes. A recipe comparision just curious you can use microwave and paper thin potat[es for chips which is too much cards Is there anothe vegatable that can be cut paper thin and microwaved that is a low carb option instead of potateos. I also was watching taco shell battle I was think to use a pasta drying rack to bend the shells. Have you tried that??
Since I'm a recovered pre-diabetic and also hypertensive, I have to watch my salt and fat. I make egg white chips as my substitute. There are many recipes online and there are Quavos brand bagged chips also.

melba toast and homemade pimientos cheese spread . I used to work in a butcher shop in Augusta GA and we made homemade pimento cheese spread and we used to sample it on there's southern homemade melba toast at a lady used to make and we buy it from her. Definitely gonna have to try that melba toast. ✌✌💪💖🌈🎅🚌🌻👍
