For the Spice Paste
Byadgi chilly / Betki (in Bombay) 10no/20grams
Fenugreek Seeds ½ tsp
Coriander Seeds 1 ½ tbsp
Cinnamon 2 grams
Cumin 1 tsp
Black Peppercorns 1 tsp
Garlic 15g
Tamarind 10 grams
Chicken 800/1000 grams
Salt 1 tsp
Turmeric 1/2 tsp
Yogurt 1/4cup 75 grams
Ghee 4 tbsp

Soak the tamarind in warm water remove all seeds and stem grind and sew the pulp in strainer and store in a glass jar keep it in the fridge. You can use it in the Indian dish.

What can we substitute instead of tamarind to make it keto-friendly?
Squeeze of lime but honestly there is hardly any tamarind in this and it's spread out over so many servings it's not gonna do anything. If I am not mistaken it's only 6g of carbs from 10g of tamarind which if you make for this dish which is 4 servings that is only 1.5g per serving so don't stress about tamarind.

Curry Leaf is like Bacon. you missing out on life buddy! All Ghee Roasts have curry leaves. Its a karnataka dish for effs sake!! :D
Sir I spoke to a Chef from Karnataka who has spent many years studying the local food. She's famous for her Ghee Roast recipe and she explicitly said no curry leaves in a ghee roast. So I would rather listen to a professional who is from the state, studies the cuisine and cooks it for a living than anyone else. 😂
Chicken ghee roast is eaten with neer dosa not with paratha.

After pondering the question several minutes, I'm just going to say I like meat in general. Except that bone-in chicken tends to stay on the bone when I eat it and the sauce stays in my mustache. My mother, on the other hand, strips the bones clean. I suspect that's because she was born during the Great Depression and her parents taught her to economize; also her mustache isn't as full and luxuriant as mine.
hahaha so in case you are going to use boneless chicken then just cook the paste out a bit longer in the ghee and then add the chicken in and follow the same method.
