Chicken Ghee Roast | Roasted Chicken - Chettinad Style | Masala Trails

  • Learn how to make Chicken Ghee Roast at home with Sneha on Get Curried
    What is Indian food without its spices? And the case of chicken ghee roast is no different. So watch & learn how to make Chicken Ghee Roast with chef Sneha Nair only on Get Curried
    Ingredients:
    Step 1
    1 kg chicken
    juice of 1 lemon
    half bowl of yogurt
    ½ tsp of turmeric powder
    Step 2
    10-15 dry red chillies
    2 tsp black peppercorns
    2 tsp coriander seeds
    11/2 tsp cumin seeds
    1 tsp fenugreek seeds
    7- 8 garlic cloves
    tamarind water
    Step 3
    1/2 cup of ghee
    salt
    11/2 tsp jaggery
    curry leaves
    Method:
    Marinate the chicken with lemon juice, yogurt and turmeric powder and keep aside for an hour.
    In a thick bottomed pan, roast the dry red chillies, black peppercorns, coriander seeds, cumin seeds and fenugreek seeds. Switch off the flame and let the spices cool down.
    Add the roasted spices in a mixer jar. Add garlic cloves, tamarind water and grind the spices together to a fine paste.
    In a pan add 1/4th cup of ghee and place the marinated chicken and cook it till the chicken is 70% done.
    Add the remaining yogurt mix, in the pan, combine it with the oil and masalas and store it aside in a bowl.
    In the same pan add the ground masala and let it cook on a low flame. Add 2 tbsp of ghee to the msala.
    Add the yogurt stock, salt, jaggery and add the cooked chicken to the pan. Keep coating the chicken with the masalas on a low flame for 5 mins.
    Add some curry leaves and the Chicken Ghee Roast is ready to be served!

    Tried this at home and even though we didn't have tamarind water and curry leaves, the end result (without these 2 ingredients) was outstanding! My preparation has basically now turned into 'Kaala Chicken', a famous Maharashtrian delicacy. Thank you, Sneha. It tastes like bliss!

    I would suggest dry roast the spices and the red chillies separately.or else it will burn as above.When dry roasting the spices,they should not smoke.otherwise it's a good recipe

    I think the spices were burnt in the video but I dry roasted them separately and it was awesome! Loved this recipe. 🥰

    I'm from Madurai, very close to Karaikudi, Karaikudi town is considered as the birth place of chettinad cuisine. No jaggery will be used in any non veg preparations and no games with butter or ghee, Pure sesame/coconut oil is used. This would taste much like a Manglorean chicken (Karnataka sweet chicken :p )

      It was spicy and tasty ..i dint use the entire masala tho. Use the masala and chiken in the appropiate ratio...if you add the entire masala in just 100 gms of chiken it is definatly going to taste bitter. :)

    I love all your recipes. I never knew Chettinad style of cooking was so flavorful especially the fish recipes. I always thought Bengalis cook the best fish dishes but I am learning new ways of preparing fish here :)

      totally agree with you. Smoking of the spices means most of the essential oils which give flavour have evaporated or destroyed.

    Looks like chicken is half cooked
    too much of ghee
    spices over fried 😬

      In most Indian Dishes, we Dry Roast spices Separately, as each spice has its own Different Timing. I think for the sake of this videos length she did it together. If each of the 8 spices were shown how to be roasted, that would take up another 10 minutes.. not to mention make the video boring.
      Another 10 minutes can be added,
      About : -
      the Quality and type of Chillies, Using Kashmari for color or using Kolhapuri for spiciness,
      or about using Rajapuri hot Black pepper and roasting it for less time or using Goan black pepper to prick punch heat,
      or instead of grinding in mixer use a Stone/coarse cut the Rosted Fennel seeds, to give a final better texture while eating...
      or how to replace jaggrey with honey
      or sugar.. or how much time to marinate chicken
      Like come on.. the Aurthor made the Video according to which she likes to have her Dish. As for the meat Some may like it Cooked, some prefer Half done, some prefer it pink.. We cannot judge them, as we don't live in the Environment, climate or culture they thrived. So lets just stop judging the wrong details and adjust according to our System which we love..

    Please excuse my ignorance but what is jaggery? Also, with the amount of chilli in there I'm guessing this is a really hot dish, would it still taste as good if I was to reduce the amount of chillies? Thank you.xx

      Jaggery is raw sugar made by boiling sugarcane juice. You can use little amount if sugar also if jaggery is not available.

      Jaggery is unrefined sugar, which is made from reducing sugar cane juice.You can reduce the amount of chillies, or choose a mild variety...like what is called "Kashmiri chilli" in India..but, I suspect the proportion of the other spices used changes as well....it is an art perfected through trial and error.!:)

      You can substitute molasses for it. It is unrefined cane sugar.

    you seem to be an amature chef.. dry roasting isnt burning the spices.. dry roasting is done on very low flame for just 30-40 secs.. dont justify by saying this that it is a chettinad recipe and they just do it this way...because chettiyars doesnt roast the spices like this..(by burning them black).
    sorry if my comment hurt anyone's sentiments..!

    It is a good recipe. Tip for roasting the spices to perfection is to roast them separately. Each spice has its own Temperature resistance. If you roast them together, some might over roast and some might not roast at all.
    A little more dash of Ghee would have helped.
