    I served this with homemade vanilla ice cream. Donal, this recipe made all my guests go silent for solid few minutes (not too long, they were finished with it quite quickly). I don’t like praising my own work in front of others, but this time I had to make an exception. The taste was mind-blowing! You, again, made it into my ‘recipe book’. 👏🏻

    Nice Tarte Tatin recipe! I like the addition of Star Anise, Calvados and Cinnamon. I don’t make it much for myself either but then again I don’t know who better deserves it than me, lol. 👍

    What is it you added to the carmelizing sugar ? Was it star anise ? What is that if I heard that right?
    I looked around and found this -
    Illicium verum is a medium-sized evergreen tree native to northeast Vietnam and southwest China. A spice commonly called star anise, staranise, star anise seed, star aniseed, Chinese star anise, or badian that closely resembles anise in flavor is obtained from the star-shaped pericarps of the fruit of I. verum which are harvested just before ripening. Star anise oil is a highly fragrant oil used in cooking, perfumery, soaps, toothpastes, mouthwashes, and skin creams. Until 2012, when they switched to using a bacterial source, Roche Pharmaceuticals used up to 90% of the world's annual star anise crop to produce shikimic acid, a chemical intermediate used in the synthesis of oseltamivir (Tamiflu).[2]
    In other words you seem to be helping China sell a product that there is a lot of production of but being phased out in one market. Are you getting paid to do that?

      The additional acidity balances the sweetness of the caramel very nicely.

    I'm always looking for apple recipes WITHOUT cinnamon. Cinnamon makes the apples taste worse, because it overpowers the apples.

    Amazing dessert ! I do it with sweet shortcrust pastry. I'm Norman and I hadn't even thought to put Calvados in the caramel. I'll try tomorrow :)

    This is not the way other cooks on other channels do this, and I bet people who follow your method end up with hardened sugar burned into their pans and probalby have to throw away their pans.

    Calvados is not a liqueur, but rather an apple brandy. Americans could use apple Jack.

    Calvados is a French Brandy derived from apples instead of grapes, not a liqueur as stated. It does not provide an apple flavor.

    This is not the BEST! Its a recipe for apples poached in sugar syrup with store bought pastry. Not tart tatin.

    Real pros add the butter to the sugar immediately. Makes for a way better totally unburnt caramel

      Lower heat more movement for more even caramelization

    good, but that caramel is too loose, gotta take it further and remove more moisture from apples before baking

    Just made this for thanksgiving. I made two mini ones tonight to make sure it tasted ok for my family. It’s soooo delicious and amazing! And I hardly know how to cook! I used a Spanish sweet raisin sherry instead since that’s what I had. What a fun thing to make. Thanks so much for this Donal. Food is love❤️

    I love apple pie, so I thought I'd try making Tarte Tatin (not your recipe, but mostly the same). The apples tasted stewed and stale, and it mostly tasted of bland sweetness rather than caramel, apple and butter. I'll try it again, but I think the upside down technique (boiling/steaming) might be an inferior way to get the maximum flavor from the apple. Just my opinion.

    Donal Donal Donal, please do not put piping hot food in your mouth! Aside from the fact that our taste buds can't really taste food that's very hot, it's a leading cause of oral cancer. Once in a blue moon it's ok, but most TV chefs do it for the show but people at home have no idea how dangerous this actually is. Otherwise good job!

    Beware! I melted the sugar and tossed in the calvados and the entire pan exploded in a ball or raging fire! Fortunately I was able to grab it off the stove and drop it away from me on the tiled floor. I’m lucky I didn’t burn myself. Next time I think I’ll heat the sugar and the calvados together, slowly.

    Good recipe, but really redundant to apply the lemon juice to the apples to prevent browning...to then brown the apples in the tarte tatin.. food for thought

    You should really use pâte brisée instead of store-bought puff pastry. Will be even better.

    I have always wanted to try Tarte Tatin too and your recipe looked delicious but I didn't have any Calvados or puff pastry but I made a rich shortcrust and your recipe for the apples is wonderful, I will always make it like this in future. I'll try puff pastry next time and Calvados. Mind you when I researched it I found a young woman born in northern France who used short crust so not sure which is authentic but what the heck hubby and I loved it. I can only improve on it now, thank you Donal. Will look at what else you make as only found you because of the Tarte Tatin.

    My first time making this dish and I used this recipe, really easy to follow. I did stupidly mess the toffee up first time by being impatient and adding butter and stirring too early, learnt my lesson there. The calvados and the spices are tremendous and make the dish really special. Also, note to self, remember the pan is hot for some time after coming out of the oven, don't grab the bloody handle!!

    Well done. It's really good served with crème fraîche. For a thicker tarte tatin I usually cut my apples in half and stuff more apple in there.
