    THANK YOU! My mom is a diabetic and has dementia. She has always been an ice cream fanatic. She sees a Dairy Queen, or any place that sells it, and I have to be the bad daughter and tell her no. I made her some tonight and she loved it. Again, thank you.

    Shelly, I’m the one with the diabetic mom with dementia. The two ingredient ice cream has been a game changer. They are great. She loves eating them. Actually all of us love it. Thank you for giving my mom ice cream back.

    Hi I am a diabetic, and I have managed to lower my A1C from 10 to the 5’s by eating low carb/Keto, and exercise every day! I don’t deviate or cheat on my low carb lifestyle.
    I am dairy intolerant, I can have a small portion of dairy like a little bit of cheese on my eggs, but if I try to make dessert with dairy products like heavy cream, I have really bad experience with that, so I use coconut cream whenever I make ice cream and both my husband and I love it. It’s rich and creamy just like heavy whipped cream, and when you add flavoring to it like cocoa powder, swerve sweetener and extract to it, it taste great!
    I just made ice cream today with coconut cream, protein powder, strawberries, strawberry extract, Allulose, powdered sweetener, and it turned out great, and I husband loves my keto ice cream!
    A couple of days ago I made a high protein chocolate, peanut butter, ice cream with coconut cream, cocoa powder PB2 peanut butter powder, Allulose, protein powder, and some vanilla extract, and that turned out great too!
    Then again, I love coconut, so coconut cream and coconut milk fit right in to my low carb/keto lifestyle, and it doesn’t cause me, grief with stomach and intestinal upset like dairy products do.

    Y'all, the 1st recipe I have been making for WEEKS now! My sweet hubby doesn't like blackberries. So to make him happy I use the strawberries and cream pure protein shake & frozen strawberries. Made some last night, so good & FILING y'all.
    Shelly, I will definitely be trying the lemon frozen yogurt, SOON. Much appreciation!

    Too Good Yogurt has saved my life, having recently discovered I am pre-diabetic. I am not fond of the pasty texture however, so I eat a half a yogurt cup with 1-2 tablespoons of chopped berries and it's the perfect quick breakfast.

    Will it work just as well if I go to the trouble of removing all the tiny seeds? I tried the berries with the protein shake and while the taste is good, I can't stand the seeds, it ruins the otherwise creamy consistency. I'm just wondering if removing the seeds would make it less diabetes friendly.

      Fruits create a spike but break down much quicker than many other foods. I think we with diabetes have to look at and make better choices, and I feel Shelly is giving some a few alternatives.
