Key Lime
Recipe: Key Lime Pie
Yields: 12 servings
Prep Time: 60 minutes
Cook/Mix: 60 minutes
Refrigerator Time: 3 hours
Total time: 5 hours
Ingredients:
Filling:
28 oz sweetened condensed milk by Mayra
(Double the recipe) • Keto Coconut Macaroons...
1/2 cup light sour cream
3/4 cup key lime juice
zest from 2 regular limes
Whipped cream:
1 cup heavy whipping cream
1/4 cup powdered sweetener
1 tablespoon vanilla extract
For the Crust:
3 tablespoons of softened butter
1 cup almond flour
1/3 cup granulated sweetener
½ teaspoon of vanilla extract
Directions:
For the crust:
Preheat the oven to 350 degrees.
Melt the butter in the microwave
Add the almond flour, sweetener, and lemon zest, vanilla, mix until fully combined.
Press the dough evenly along the bottom and line the pan with parchment paper or foil first, then you can lift them easier.
Bake for 10 minutes.
Remove and cool while you make the filling:
Filling:
Preheat oven to 350F
Whisk together sweetened condensed milk, sour cream, lime juice, and lime zest in a medium bowl. Pour into the prepared crust and bake for 10 minutes.
Let the pie cool slightly before chilling. Chill for at least 3 hours.
Whipped Cream:
Beat heavy cream, vanilla, and sugar together in a mixer until stiff peaks form.
Spread or pipe the whipped cream on top of the cooled pie. Top with additional lime zest if desired.

The link to the condensed milk is actually some AMAZING coconut macaroons..... so I watched!!!! I am almost sad to ask you to link the milk because I like the macaroon recipe...and it is handy to have it with the pie... Easy to find, like a 2 for 1..... So much YUM!
This looks delicious 😋.
However just an ounce (30ml) of sweetened condensed milk contains 15 gm of sugar so it's not going to work for me though before I was keto, for a treat I would add a little to my coffee, also delish.

Another take on whipping the cream, is if you have a regular blender, freeze the two beaters and then whip the cream.

Having struggled with my weight I now see my 19 year old daughter struggling with her weight. She has seen my results & is now going to try Keto. About six years ago the Marie Calenders closed near my mother's house in Tucson Arizona. I loved any of their lemon pies. I live in NJ. We don't have a resterurant

Keylime pie is my absolute favorite ever… Anywhere. Last time I picked one up at Marie calendars on the poster it was all decked out with whip cream accents and it looked lovely and I thought I’ll grab one of those for my dinner party and I got it home and there was no whip cream is just plain which if it was just me sitting at home I would’ve just grabbed a fork and went to town… LOL. But since it was for a dinner party I went back to complain and they gave me two free pies. Can’t wait to make this version.

@@FM19MONTH I do this with certain sweets. Cheesecake is another. I’m not a chocolate lover unless it the real deal, not keto. Keto ice cream can’t replace artisan ice cream because it melts too fast to enjoy it.

Born and raised in South Florida with a key lime tree in the backyard. To be honest the color of that pie looks hideous, but that's not what matters taste is where it's at. I am going to have to try this. Always try to go to Marie callender when we went to the West Coast. I think key lime was my go-to but it's been 20 years and can't remember.

I think it matters how long you cook the condensed milk. I never let mine get that dark.

The condensed milk you are using looks like the caramel version as quite brown. In UK we have the ordinary creamy colour and the caramel version. Which is best to use? Great recipe.
