Arroz de Tamboril - Portuguese Monkfish Rice

  • Arroz de Tamboril is a wonderful traditional Portuguese rice dish made with Monkfish.
    Being Portugal a country with extensive coast in which fishing play an important role in the coastal economy, there are numerous dishes of Portuguese cuisine where fish is the reference ingredient and seafood rice is a common dish throughout Portugal.
    This delicious rice stew with tender monkfish is very simple and easy to prepare!
    👉🏼 INGREDIENTS (FOR 4 SERVINGS):
    • 600 g Monkfish cut into cubes
    • 200 g Carolino rice (medium grain rice)
    • 200 ml of tomato pulp
    • 1 red bell pepper
    • 1 large onion
    • 2 garlic cloves
    • 250 ml white wine
    • 150 ml olive oil
    • 2 bay leaves
    • Fresh chopped coriander
    • 800 ml water
    • Some alt
    • Some Pepper
    Cooking time: 30-40 minutes
