I smoked my first brisket Sunday and i just wanted to say it was a success. Thanks to you, Mad Scientists BBQ, and the guy who uploaded the Masterclass on Franklin before they took it down 😂. I did the trimming and seasoning, but my brother took care of the fire. After about 6 hrs we were thinking we messed up, I told him to pull out the water pan. Next 3 hrs we finally started getting it drier and the bark was darkening. We wrapped it up at midnight after it reached 203°F and popped it in the oven at 170°F overnight. Around 10 am I added some melted beef tallow. When we pulled it out for lunch it was at 166°f.

It is, after all, the best method of cutting non-roll sandwiches!! And I totally agree that we need a whole series on grilled cheeses, preferably starting with either a rib or pork belly grilled cheese 😃
Congrats on all the celebratory events! This channel has made a big difference in my BBQ skill set, and I can't wait to see the new videos every week. (No pressure! Take a week off if you need the mental health break. That's super important.) Regarding small briskets: I'll always prefer to cook two smaller ones vs. one big hunk; I get more consistent results throughout the whole cut that way.

Only thing with this is it is technically a brisket melt. Grilled cheese sandwiches don't have other things in it. If the sandwich has cheese plus something else, it's a melt.
