Hey Bradley! We finally tried the baking soda added to the water. We were amazed at how EZ it was to peel eggs for whatever reason we fixed boiled eggs for.
I have been making them every holiday for a long time. The made them this year with smoked eggs and it was great. I will definitely be making this style also.
Defanatly going to try that. I love to make deviled eggs. Crack the egg on the large end take a tea spoon work it under the shell while holding it under running water and run it around keeping the tip of the spoon in contact with the inside of the shell. I can peel a dozen eggs in under two minutes using this method

You're supposed to be able to eat these things cold in a carriage (chaise and four if you're rich) bouncing down an unpaved highway. No runny yolks if you're gunna do that. Devilling them....not sure. We in Victoria Australia are very sad right now. We had an out break of bird flu, and many chickens had to be destroyed. The supermarkets have zero eggs in them now. Like toilet paper in the pandemic, but it's eggs. EGGS!!
I cook my eggs in an insta pot for 5 minutes, then put them right in an ice bath and they usually all peel awesome. I don’t do them any other way. I can do 18 eggs all at once with a double rack I bought for the insta pot.
Get an egg piercer and pierce the bottoms where the bubble is. Wait until the water is boiling then add the eggs. 7.5 minutes for runny ramen egg, 10 minutes almost fully cooked, 12-15 minutes fully cooked. Shock them in cold water and peel under water and the shell comes right off.
I eat and love all food, including freshly killed elk and javelina liver, BUT since I was a kid I've hated eggs. So my work around here is to make chorizo sausage and stuff with cream cheese stuffed jalapeños. That would be, deeelicious.

I have done both versions, fried and smoked, of scotch eggs. It is probably the one case where I would prefer fried over smoked.

The only way to ensure they peel well, is to boil the water first and then add them.
This is the way. Converted from cold start to hot start a year or two ago and haven’t had an issue peeling since.

Easier to peel - do not cold start them. Drop into boiling water and then after time is up, into ice water. Don't need any additions to the water.
