Today was the second BLACKSTONE GRIDDLE day.
I tried an omelet and it came out GREAT, and I am hard to please.
I used 4 eggs, 2 Tblsp of Sour cream, a skoch and a half of minced garlic, and 2 pinches of various spices and mixed with a hand blender (introducing air into the mix)
The main ingredients were sliced cherry tomatoes, bacon bits, chopped potato bits, and finely sliced onion on a bed of brussel sprout leaves.
Rolled and covered with shredded, sharp cheddar.
Garnished with a few cherry tomatoes and a sprig of parsley. (some Red-Green-&-Yellow for presentation)
Thanks to BLACKSTONE BETTY, I used residual heat.
Hey Betty, here’s a tip I learned long ago if you want fluffier eggs. Instead of scrambling them with plain water, use soda water (carbonated). The carbonation puffs out the protein in the egg and gives you a fluffier result.

To get more fluffy eggs add a pinch or two of baking POWDER. We use it for fluffy baking. It does the same in scrambled eggs..

I had to buy square metal egg molds because I couldn’t find a blackstone brand set. Yes I know there are egg rings by blackstone but since I got my 4.5 inch metal egg rings I’m in love. Makes a perfect square flat cornered egg patty for toast like the Koreans use.
Edit: if you like thick even cooked eggs don’t use the silicone molds. Metal+Fire=Hot Surface.

Nice omlet, i love to cook my onions with sausage crumbles then mix the eggs, cook and roll. Display in front of a blank wall because Blackstone Betty won't send me the sticker she said she would. I sent my addy to your Instagram. If this was CJ's cooking show, I would have the paperboy scene where he's chasing the guy down the street yelling " two dollars, I want my two dollars!" .....LOL have a great day and tag CJ so maybe I can get on " Comments of the week" . Thanks for sharing the great tips. Eggs have never worked well for me on the Blackstone. Now I know why. Gee, I gotta try using ghee.

After griddle hot turn off burner crack eggs on griddle and let them hangout until they’re done to your liking, got it
I started using an immersion blender ( or the old malt shop milk shake blenders) for my omelets and scrambled eggs they make them so light and airy. I also use this method for frittatas and stratus in the oven I get a far greater rise from the air whipped into the eggs by the blender. I guess you could use a standard blender but I like the immersion blender better for this. I still add a little cream, half and half, milk or water to the eggs . I have had a few people didn't like the fluffy airy texture and prefer the hand whisk method. Guess it is just a matter of personal preference. I like it all ways but lean more for the blender version. Let's face I like eggs fried, scrabbled, boiled, baked or poached eggs is alway a winner. Speaking of eggs my wife and I had smoked ham slices, fresh biscuits and fried eggs sunny side up fried in butter for dinner tonight. Almost made some cheesy Grits to go with it thought also about hash browns or home fries; but my wife wanted something just a little lighter. Your omelet looked very yummy. My favorite is spinach and feta cheese omelets with rye toast.

Betty... Great video, seems like I always overcook my scrambled eggs and omelets when cooking them on the stove. I have a Blackstone 28" Rangetop Combo griddle so your method would be easy enough to follow. But I also have one of the new Blackstone 17" E-Series griddles, when you first turn it on it defaults to 200 degrees and can go as high as 400 degrees. What would be the ideal heat setting for my E-Series? Would the default 200 degrees be too high or would I need to set it higher?

Betty, Take whatever ingredients you like for an omelet and prepare them. Now take two to 4 eggs (depending on how hungry you are) and do just like you did for scrambled eggs. Now combine all ingredients in your bowl. I like lots of cheese. Stir everything together and pour on the griddle. Smooth out to your plate size. Cook slowly and flip when you feel it is time. Finish on the other side. Plate it and enjoy!

Do I have too much oil seasoning on my grill or too much butter? I always have trouble with my eggs looking brown after cooking them. Yours turned out amazing.
Same here! Mine always pick up the color of my blackstone.
Sounds to me, like you're running hot, and browning your butter, unless it's a crispy brown, and then, you're still running hot.

Don’t cook the eggs in the same spot where something recently cooked. Find a fresh spot and clean it off good. Then low and slow with just residual heat
I think the key is working with the residual heat and not have the heat on. Plus as other said when you add butter it might be a little hot thus browning it

It looked like your bread wasn’t toasted. I made my breakfast this.morning on my new Blackstone. I even grilled my 5 Grain Italian bread so it would be toasty
why are my eggs always black when i make them on my griddle? I always clean it after a cook and sometimes before if it has been a considerable time since my last cook.
Warm up the griddle and spray water on it! If it's dark when wiping (carefully) with a paper towel your griddle is dirty. Heat it to high until the excess burns off and then re-oil it.
Omelet looks SPOT ON Betty....going with the burners off next time thanks.

Love my blackstone and love eggs. But please don’t use grocery store eggs. Find a local producer or farmer. Our eggs are from non gmo fed chickens and the yokes are a deep rich orange color and the taste is unbelievable. Bake a cake with some good honest farm fresh eggs you’ll never get the crap at a grocery store again. Oh and use some food Irish butter. It’s as life changing as farm fresh eggs.

Filthy cook with a capital F! Love using the egg cups. Funny story- I’m at the tractor pull Friday night and I brought the Blackstone and started selling smash burgers and tuna melts in the parking lot. I sold all the burgers & had 1 tuna melt left. This guy from the stadium comes out and is like hey u can’t be selling food and beer out here blah blah blah. I said, dude last week I saw a chick give birth in the Porto potty while doing meth so I think u gotta bigger fish. I give him the last tuna melt to shut him up & this is where it gets interesting. He says, woulda been better with Miracle Whip. Wtf! I use Dukes Mayo and this thrill Billy says use miracle whip? I lose it and start yelling, he’s like you don’t have a license to sell beer I’m calling the cops. 😀 I loaded up the blackstone and hauled a$$ outta there. Made $45 so that’s something.
