For a new batch, I like to add one teaspoon of Natren yogurt starter with one tablespoon of the previous yogurt batch. That way I know every batch is filled with the yoginis. For me, it's worth having an Instant Pot with the "yogurt" setting, to get great yogurt every time. Also, when you order your yogurt starter directly from Natren, ask for the free book, written by the founder, on probiotics. It's the definitive work on probiotics.
What's your thoughts on ACV? I was drinking apple cider vinegar but if acidity kills friendly bacteria maybe i should cut down on it or reduce the amount of ACV i consume 😉
But why is the health trend screaming that only RAW dairy is best and not to buy pasteurized milk? Is pasteurized milk or yoghurt /cheese bad for Hashimotos ? My functional doc said all forms of dairy is inflammatory for Hashimotos, but I miss it so much and its hard for me to believe that we got to completely avoid dairy forever. I have a sensitive stomach when I ear hot foods and always feel good when I eat clean plain yoghurt which tells me intuitively that my body likes and needs it. The diet I have been asked to follow for Hashimotos is called AIP diet where no grains, nuts, dairy, lentils , beans or eggs are allowed; to heal the body, only meats, veggies and fruits are safe. Would appreciate your insights on diet for Hashimotos from Ayurvedic perspective without so many restrictions as all these are natural foods and not Standard American Diet/processed.
Each of your questions requires a very lengthy reply, but I'll try to give you a quick response nonetheless. Yes, raw dairy is always the best. We're just saying to cook it before using so that you might kill any infection in the milk and at the same time make the milk more digestible. As far as the Hashimoto's is concerned, please refer to my book, "Healing the Thyroid With Ayurveda." I have devoted a whole chapter on Hashimoto's. In a nutshell, it's not that milk creates inflammation: it's the other way around. The fact that you have this autoimmune disease means that your gut and liver aren't working correctly. These are two very large parts of not just the immune system but also the digestive system. Which means that once both are compromised, your immune system can lose its intelligence and attack you (in your case, the thyroid gland). At the same time, since both are also the seat of digestion when the food comes in they have to also correctly process it. The proteins in gluten and dairy are the two most difficult to digest, so unless your digestion is 100% effective, your body will turn them into a fermented acid toxin (which we call ama visha in Ayurveda) which gives you reactions, such as inflammation. Everyone is looking at it from the other angle: that the gluten and dairy are creating the inflammation and that you will be OK if you just eliminate the gluten and dairy. Yes, you will be better since you're not creating an acid toxin from the food, but the real issue is that you need to fix your gut and liver so you can digest them again. I have been told that all milk products these days are very high in toxins due to the high level of toxins that are ubiquitous in the environment. I have understood that toxins are found in high concentration in milk. Is this something that concerns you for both ghee and yoghurt made with dairy?

Ghee is clarified butter so milk solids aren’t in it.
