  • Black sesame mochi bread is very popular and common pastry in Korean bakeries. Eventhough it is called mochi bread, but it is not made of glutinous rice flour but tapioca starch which giving the similar chewy texture.
    Ingredients:
    25g unsalted butter [1 ¾ tbsp]
    25g sugar [2 tbsp]
    2g salt [⅓ tsp]
    125ml milk [½cup]
    25g all purpose flour [3 tbsp]
    110g tapioca starch [⅔ cup]
    50g egg [4 tbsp]
    10g black sesame seed [1 tbsp]

      ad ơi làm sao để bảo quản bánh này ạ? Em muốn gửi bánh sang tỉnh khác cho bạn nhưng sợ bánh bị hỏng ạ.

      Bạn cứ cho vào gói hoặc hộp kín gió, để lâu bánh sẽ bị dai nên trước khi ăn phải dặn cho vô lò hay NCKD sấy lại ở 100 độ trong 5 phút

    OMG so I just tried this recipe and it was amazing! I’m not terribly skilled (I’m yet to conquer choux pastry) BUT this came out really well! I was afraid because I didn’t seem to have the same glossy texture but after baking it was perfect! Also, I used pistachio and dried strawberry since I didn’t have sesame, and used two spoons instead of a piping bag to deposit the dough. Thank you for making this video!

    Today I baked mouchi buns for the first time 😀. I followed this recipe. In the beginning they looked flat. I was worried why they didn't rise. But in the end they doubled in size. Crispy outside chewy inside I like this recipe. All 9pcs not enough for us. Next time I will double the ingredients.

    Hnay mình đã thử làm bánh. Bánh rất ngon luôn ấy. Mà vỏ bánh của mình hơi cứng và màu bánh không được vàng như bạn? Có phải do nhiệt nướng không đủ không ạ?

      Bạn thử điều chỉnh nhiệt cho phù hợp thêm tại mỗi lò có nhiệt khác nhau đó ạ

    CẢm ơn công thức của bạn! Ngon lắm lắm luôn, nhưng mình làm nó ko nở tròn đẹp như của bạn, mặc dù mình đã làm nóng lò 180C-28p trước đó, rùi để bánh vô nướng cũng nhiệt đó luôn , lý do là sao nó ko nở tròn đều được nhỉ, hix, mong bạn rep mình nha

    Hi, I have researched a little bit and recognized that some premix flour using corn starch in stead of tapioca starch. It may be the reason why the bread with premix flour is still chewy and soft in the next day. Have you ever tried that? I have tried and sometimes I succeeded, sometimes I failed 😂 I will try that tips with your receipt. Hope it works hehee

    Mình làm theo công thức, vị ăn khá ngon ^^.
    Nhưng lúc mới nướng xong thì bên trong dẻo như mochi, để nguội 1 lúc thì mới bắt đầu thấy tạo ra lớp tổ ong, để qua ngày (để ngoài, k bỏ tủ lạnh) thì ruột bánh bị khô và cứng lại. Không biết do mình làm chưa đúng hay bánh sẽ chỉ ăn ngon trong ngày nhỉ? Nếu chưa đúng thì có lưu ý gì lúc làm không bạn?

      You keep in airtight container also you can re-bake a bit in low temperature to make it fresh again

      Được ạ. Bạn canh nhiệt và thời gian phù hợp với nồi nha, tại nồi không gian hẹp hơn nên bánh sẽ chín nhanh hơn với lò đó ạ

    Cho mình hỏi khi cho bột all purpose vào thì bột mình bị vón cục ko được smooth như của bạn. Mình cho bột vào lúc sữa và bo vừa sôi ah.

    Hi Mine puffed up nicely in the oven but collapsed and flattened after taking out of oven. What should I do ensure it stays puffed up with airy holes inside like yours? Thank you for a lovely video.

      Thats usually not cooked enough 😀
      U can put it longer and check your oven temperature, if too hot it might get burned before its done

      @@HNCKitchen Thank you for the advice! I made it with cheese instead of black sesame .. added 30g grated Gouda to the batter before adding egg... do you think it might have been a cause as well? Or should I have used a dryer hard cheese like Parmesan instead?

    Does it need to be refrigerated? How many days is it good for on the counter overnight and in the fridge?

      It doesn’t really need to be in fridge, the bread can stay outside for few days, but it will get harder, that time need to be reheated in oven in 100 degrees about 5-7 mins before serving to make it crunchy again

      Tuỳ vào điều kiện thời tiết ạ. Nếu bạn muốn giòn lại thì cứ cho vô lò sấy qua là được ạ

      Bạn nhớ cho bột qua rây và khuấy đều tay. Có thể thêm chút sữa để lỏng hơn

    Bạn ơi bánh mình làm theo công thức bạn thành công nhất trong các công thức mình xem nhưng mà sao mình nướng lại không được nở to tròn như bạn ạ? Mình có sai chổ nào không nhỉ?
    Lò mình nướng 180-200 độ 28-30’ nhưng bánh lại k căn tròn 😭

      Có lẽ do các lò có sự khác nhau, bạn thử điều chỉnh nướng lâu hơn xem. Nếu trộn bột ok thì chắc do nướng chưa đủ thôi ạ!

      You can add 5-10g cocoa powder to the flour and mix them

    Thank you for your video. I tried yours plus 2 others, all similar recipes, made sure to keep the dough somewhat cooled before adding the egg, and still every time the mochi bread never rises... they are basically gummy cookies. We are near sea level so altitude shouldn't be factor. Any ideas?

      Honestly I am confused, it is basically the same with making choux and my dough always rose, the problem usually it will shrink because its not cooked enough. Have you tried to make choux before?

      Bạn cho vô túi hay hộp gói kín tránh gió là được. Bánh chỉ dùng trong ngày thôi, nếu để lâu cần sấy lại ạ

    Mình không có bột mì đa dụng mà thay bằng bột mì số 8 đc không ạ? (vì bột số 11 hoặc 13 thì mình cũng không có)

    I tried your recipe... Taste good but didn't rise up...it ended up as cookies... What do you think is the reason? Thank much for all the help.

      Usually the problem is the dough is too hot while adding the egg, so its cooked. It is better to move the dough to other bowl to cool down a little then start mixing 😀

      Make sure the dough texture to meet requirement and test the heat of ur oven

      Hey, im bacc for the review. Thank you for the recipe. About the egg, i used one but seem too much that it made my dough watery a bit. So i had to fix it by adding more tapioca starch, but it still ended well, chewy and empty inside 💯💯
      Also, i used air fryer, same heat and time like in the clip uses for oven, after half amount of time, i opened the batch and turn the balls over
