Thanks! I haven’t tried with just cream cheese, but in theory mascarpone is almost like the Italian version of American cream cheese and has a bit higher fat content and a firmer creamier texture. What I would do if you wanted to just use cream cheese is to add a bit of heavy cream to the mix :), a bit like making basque cheesecake!

But as an approx, I reckon it would be the following: Shortcrust pastry for 2 tarts: - 2 cup bread flour - 1/2cup butter - 1tsp salt (~3g) - 1 egg yolk - 1/4 cup water For the filling for 1 tart: - 2/3 cup cream cheese - 3 2/3 tsp sugar - 1/3 cup mascarpone cheese - 2 tbsp milk - 1 tsp corn starch Apricot Glaze: - 100g apricot jam - 1/4 cup water Egg wash: - 1 egg yolk - 1 tbsp milk Hope it helps!

I wouldn’t advise that, brie has a much more savoury taste and different texture than cream cheese - but you can try 😅
