    Tried with normal bread flour (10% of it very coarse whole Wheat) and the result was VERY good! Huge raise, big holes, wonderful crust.

    I tried the recipe and the bread was very nice. It is basically a foccacia that's given a diifferent form, and with no oil. Loved it, will try again.

    Od dawna robię ten chleb, bo jest prosty i bez żadnych konserwantów. Skórka super. Piekę go jednak w 220 stopniach. Chleb jest naprawdę pyszny😊😊😊

    dough with 80% hydration is hard to handle. respect on that. you should let it rest for longer though. makes a huge difference, but i'm sure you know that.

    I made this and it's a lovely bread. I didn't quite get the big, open crumb, but it was still okay -- more of a medium crumb for me. The technique shown is pretty important, and as always with good bread, there really is never a suitable substitute for time.

    Чтоб такой хлеб получился, протеинов в муке должно быть примерно 13. А так отличный рецепт. Я ещё оливковое масло , отруби добавляю, семечки всякие…. Рецепт рабочий и простой.

      Hi, if you want to make two smaller loaves you have to bake it for 30 minutes at 200°C (390°F) I always recommend using a strong flour with lots of protein.

    Looks delicious! Can I replace the instant yeast with starter (levain)? and if yes, how much and how does it affect the amount of water? Also, when you say 20 mn at 250 and 35 mn at 200, do you mean total 20+35=55 mn in total or time depending on temperature? Do you need add a cup of hot water in the oven to create steam? Thanks!

      no it's not the same thing, you have to find a flour with 14% protein

      Extremely difficult to find flour with that level of protein - even strong bread flour is only about 13%

      If you're in the States, get King Arthur bread flour (12.7 protein) or Gold Medal bread flour. Both will be fine.

      Hey friend, I did manage to find 11 percent and I have made some vital wheat gluten to add in order to bump up the protein. I will see how I go, the only other problem is my oven only goes up to 200 degrees. I hope this works

      I think it was enough to knead in the evening, fold it in the morning, and after an hour cook it in the oven

    Carissimi lettori oggi o fatto un pane che e una goduria
    O messo 400g di farina w360 e 100 di farina integrale ,o seguito attentamente la ricetta del signor Rapanello .
    Lo fatto nel forno elettrico e mi e venuto con una bella grosta molto groccante e molti buchi come il formaggio Emental Svizzero 😂

      il vapore nel forno di casa senza pressione non serve assolutamente a nulla se non forse a tenere umida la crosta, comunque non lo uso mai.

    Ciao il pane mi è venuto veramente buono alveolato come hai mostrato nel video unica pecca che la crosta è venuta troppi croccante che cosa posso fare ?

      La prox volta appena sfornato lo copri con un panno leggero e ce lo lasci raffreddare dentro, leggero.

      Ale tak je to zprávně, kůrka má být křupavá, je to chleba, jinak si dej radši buchtu, ta měkká!!!!!

    I love making this bread, but have to add more water even though I use bread flour. Measured 3 1/2 c. plus two tbs of flour. I use almost 2 cups water

      Maybe the flour was too compact in cup?

      use gram, not cups. No baker uses cups.

    Je trouve ce pain magnifique,facile à réaliser,merci!!!. Je souhaite doubler les quantités pour un pain d’un kilos, qu’elles seront les temps de cuisson s v pl ?
