Hey! I can play a few pieces but struggle to learn new stuff, going back to basics and this helps :)
Quick question: How long does it take to learn a new scale properly? (Eg: Two octives, both hands together)

No way to predict how long it will take, it all depends on the individual and how rigorously they practice.

That won’t won’t, too many crossovers - that fingering would give you 2.5 octaves
