    I have made pasta from scratch on numerous occasions, for the last twenty years. The dough is better when it is rested in the refrigerator. Also, using a 50/50 ratio of AP flour and Semolina makes for a more-Italian style pasta. I am not being critical, but trying to be helpful.

      I have made pasta from scratch on numerous occasions, for the last 25 years. Do not put your pasta in the refrigerator. And you use wrong pasta per recipe. Not being critical. Just helpful. 👍

    My thirteen year old son showed me your videos a couple weeks ago and since then we have made six of your meals together. It’s been a lot of fun, and it’s ALL been delicious.

    Agree with the food processor for making the dough, it works like a dream. Two hints when rolling it out. 1) Roll out at the widest setting (my kitchenAid roller shows "0") book fold so the dough is as wide as the roller and run through in that direction (90-degrees from the first roll) so you're using the entire width of the roller. 2) flour each time the dough starts to feel the slightest bit sticky. You won't get the curled edges and ripped holes that way. And if you ever want to do Semolina flour, buzz it alone in the food processor first to get a finer grind, and only use Semolina for 1/3 of your flour and 2/3 AP flour.

    I learned how to do this in the 90s from a couple of guys that have an Italian restaurant in Dallas and a show on PBS. Two cups of flour I use one egg and about a teaspoon of water little bit of salt and just a dash of white pepper. Fold it in thirds each time you put it through. Helps mix the dough better. Always much better than store-bought pasta. Thanks you guys love your show.

    This is the best pasta dish I've made in a long time!!! I loved it. This video reminded me of the first time I rolled homemade pasta with the Kitchen Aid. It is very exciting and fun. Thank you so much for this video and recipe.

    Went through a bout of making pasta years ago… except I made the dough in a food processor, then rolled it out on a hand crank machine. Man, home made like this is fabuloso.

    The first few times you do it on 1, you want to fold it like a letter to get the right width, consistent thickness,, and even ends. Then you can feed it through the other numbers.

    My 13 year old granddaughter lived in Turin during the worst of covid where she learned to cook Italiano.
    When she returned to Oregon she made us an entire dinner even home made pasta which was fantastic...

    Great Job!!
    I have an Atlas 150 manual pasta maker with a bunch of attachments.
    Size your pasta to what noodle you are making and keep the dough floured...
    Atlas makes a little flour shaker which really comes in handy, when I first started I did not flour it enough and it stuck in the noodle makers.
    I use bread flour or 00 flour and I usually use 1/2 semolina flour.
    Weigh out your flour for better results.
    500 grams flour, 5 eggs, pinch of salt, splash of olive oil. Simple!
    Portion out in 80 gram servings is good for 2 people, I vacuum bag and freeze for later use.
    The BEST pasta is home made!!

    Very nice! Try a touch of semolina flour after rolling to prevent sticking, and you can always hang it until you boil.

    you did good, especially for a first timer, i use a hand crank one, thats fun with only 2 hands. you should try to do it with fresh spinach, i made some killer lasagna a while back using spinach in the dough. theres plenty of recipes out there to give you ideas on which procedure you prefer.

    I use the mixer with the dough hook to make my pasta. It is quick and easy. Just knead it with the hook until it comes clear of the bowl and loads up the hook then take it off and dust with a little bit of flour and wrap for at least 30 minutes. I have the attachments you have and also several hand crank ones, and even a ravioli attachment.

    If you get the cling film box you’ll notice there is a slit on each end of the box. Push the slit inwards and it holds the roll in place 😉 this works with tin foil too 👍 love your videos I watch every single one !!

    Beautiful!!! You have encouraged others to make pasta. Hint: add more flour than you need for your well, use the leftover flour to powder coat your pasta with every other pass into the pasta machine plus let the noodles rest before you boil them, they can get sticky.     Way back in ancient history, we had a Ron Popeil Pasta Maker. Throw all the ingredients in, hit the go switch to mix, then reverse the switch to start extruding. Easy pasta, and absolutely wonderful taste. So much better than the stuff in the box from the grocery store. But, the extruder body of the pasta maker was plastic and there was way too much stress in the extrusion process, so eventually the body cracked. We bought a replacement part and eventually it cracked too. End of pasta maker. End of homemade pasta.
    Fast forward to today. This was the inspiration to try again. So I just ordered the Kitchenaid pasta rollers/cutters set. Can't wait to try it out here. (But not sure if I can afford to watch this channel any more. So far, because of Sam I've bought an Instant Pot, and now the Kitchenaid Pasta Set. Getting pricey out here!)

    You should have put more floor on the surface and your hand when needing the dough. You should also have had an attachment in that set for doing varying widths of noodles, that will blow your mind too. Loved the work and banter.

    Making pasta is super fun, I have no idea how you have never done this before, it's awesome. For people wanting to make pasta, I would definitely recommend a powered roller like what he was using. When I started making pasta I tried manually rolling and it's such a pain in the ass, you definitely don't want to have to do that

    there's a pasta called Maltagliati, which means badly cut and it's in essence one of those sheets cut into shapes in a random fashion. I hang my paghetti or tagliatelle in a dowel to dry. but it looks good for your first time, so well done

    It is tough to cook without onions and garlic.
    I challenge myself to that exact task. I belive it helps me grow as a cook.
    I also like to ask guests ahead of time for an ingredient and see if I can incorporate that into the meal I serve them. Just challenging fun.

    Greg LaPolla is correct, double O semolina flour is the way to go. Also, when putting Your sheets through the rollers, You should fold them over, and put them through again for at least the first 3, or for 4 runs.
    I've been making fresh pasta for years. Thanks Sam for enticing Your audience to explore. As You help cooks understand, it's no all about just the eating, but the process.

    growing up my nana and i always let the pasta dough dry a little just by putting it over wooden drying racks for a hour or so! helps it be less sticky when cutting it and portioning it :) enjoy!!!

    I have a pasta roller but it can’t lock to my kitchen counter so I haven’t used it in forever. I also have an extruded pasta machine and haven’t used it since 1999. I am going to try attaching the pasta roller to my ironing board, like I’ve seen Alton Brown do. Great job, Sam.

    Sam, GLAD tip, foil too; there’s tabs on the ends of the boxes. Push them in on both ends of the box and the rolls won’t come out! Who knew?

    For anyone reading this, seriously do give making pasta from scratch a try. It's far, far easier than you are imagining, and if you do the whole production while splitting a bottle of wine with a date, well, even if you don't get some action she *will* be impressed.
    The attachments are kind of pricey but a rolling pin isn't, and the ingredients sure aren't.

    Easy to remember for your future pasta endeavors. 2/3 cup of flour for each egg and it will turn out perfect. Just egg and flour that's it. And another vote for the food processor to bring it together, it makes the job a whole bunch easier. Since I've been making my own pasta (about a couple years now) my family won't eat store bought stuff any more.

    Scratch the electric pasta maker and use the Atlas pasta machine which gives you better control. Also eggs are not needed, check out Sicilian pasta, eggs are used more in more in northern Italy. Either way it is great. Glad you did this

    Hey Sam! Any of those rolls of aluminum, plastic wrap ect, can be held in place by pinching in the sides of the box it comes with!
    This will hold the roll in place while you pull to size! Love the videos!

    Absolutely use the food processor for the dough. That said that was some funny stuff Sam. I am sure that you will use the pasta cutters as you experiment, they make life easy.

    Made pasta lots of times myself. You can also just add the flour to a bowl, make a dent in the center in there and crack in the eggs in the dent. That way you don't have the struggle of your eggs going everywhere if the walls are breaking down. I tested both, doesn't make a difference in my opinion

    I was cracking up but no, no Italian grandma. He doesn't do enough Italian food. Just grandma Sam the cooking guy is good enough. 😂🤣
