Looks so good … My mom used to make a similar version of this when we were kids…almost the same except she adds diced potatoes and carrots and diced green bell pepper. It is possible that she adds those 2 ingredients as fillers.. I guess she tries to sneak in some “vegetables” for us kids by adding the potatoes and carrots and green bell pepper… It was always so good though..😊
Made this tonight…so easy and so delicious! Used my homemade tomato sauce, toasted dried onion, and dried parsley added to the sauce before cooking. Wonderful flavor added by the smoked paprika. And be sure to serve a crusty bread to get all of the sauce!

I've only had fried boiled eggs tempura style. The yolk was like that of a poached egg, it was divine. But I can't imagine a 'hard' boiled egg which is already rubbery, fried. Seems it would harden the rubber more. I love eggs, they're in my top 5 favorite foods but I am picky about how they're prepared.

He especially he likes the tomato-white bean-skillet. And I cooked him the spicy tomato rice with eggs. He insists I cook again next time.
He doesn't do much red meat, if any. It is eggs, fish and veggies most of the time. Classic Spanish Cooking. Feel free to add red meat to anything you cook. your kitchen, your rules. I eat the opposite mostly beef, pork, chicken and fish in that order of preference of animal protein. Most dietary advice these days is to add more veggies and fruit while cutting back animal proteins. which is why I try to follow the Mediterranean style diet. Since starting in 1992, I've lost 75-80 Pounds and all my lab indicators point to health. And the last 30+ years have been delicious eating. I even like fish now! just my $0.02 worth.

In Portuguese cuisine eggs are poached on top of green peas in some tomato sauce and slices of sausage. Your recipe looks delicious!
