That looks really good, love potatoes and bacon. Here in Greece we don't have ranch dressing what can i put instead?
You can try a sauce made with mayo and sour cream then just add fresh herbs. Like a green goddess dressing could work too

If you boil the potatoes till they're almost cooked it shortens the time in the oven plus the "starch" is taken out of the spuds, ( potatoes )
