So far your cooking style is a lot like mine. Cussing with your head in the fridge/ freezer/pantry, most days all three. Substituting ingredients, because I can’t make or use a shopping list. Don’t bother with measuring cups To top it all off. Minor burns, some not so minor 😂
You need to re-label the sauce Mustard/Vinegar (North Carolina) or sweet (South Carolina). Most everything south of North Carolina is molasses-based "sweet" sauce. It can be spicy enough to melt your lips, but is referred to as sweet or sweet smokey. North of South Carolina, you find mustard or "vinegar-based" sauce. The great thing is eating all of them from little roadside BBQ places, which you see once you leave the cities in the southeast. Nothing you get outside of Dixie is any good. Virginia to Alabama/Mississippee, and only including the Florida panhandle. Other BBQ, like Texas, is just burnt meat, and is awful. Texas Chili is the best. Texas BBQ is barfing fuel. You basically have to get to The Carolinas, Georgia or Alabama where you get "real" BBQ, at weird little places out in the sticks. And leave your predjudices at home. You'll see confederate flags at a place where black folks eat. These are real people, in real America, outside the Washington/New York thought-compliance machine. They love to feed their neighbors, and people love to eat it.

Some people have restrictions on grilling/smoking outside.
I’d have a hard time living somewhere that wouldn’t allow cooking outside / open flame
