Why are so many commenting on the dude speaking in his video? I really don't get it. He is just explaining every step. And if people would actually LISTEN he clearly says he is NOT giving the jerky to his dog, just some cooked up left over bits and pieces. Those have no salt or anything. I even give those raw to my dog, because he is a dog and not a human. Normal dogs can process raw chicken, you know? Their stomach acid can even perfectly process raw bones, so stop humanizing them. I liked this video. It was informative and clear.

IF you are going to give your dog "bones," EVERY Veterinary Doc I've spoken to tell me that you should Never, EVER, E.V.E.R. give a dog Chicken bones, cooked or otherwise, that hasn't been PULVERIZED into a VERY FINELY GROUND consistency! The same goes with beef bones that aren't truly HARD and DENSE and not easily broken and swallowed! Chicken bones don't easily break down in the stomach or intestinal tract of a dog and since dogs are "gulpers" and not fastidious "chewers" of bones or anything for that matter, you run the VERY REAL RISK of the dog ingesting large (!) and sharp/pointy slivers or chunks of bone material. Let your imagination let you know that this can be DISASTROUS for any dog. ESPECIALLY a ravenously hungry dog since they will consume anything bones and all! Those sharp bones, be they chicken or beef, could be too large to pass through the digestive tract and could cause a very painful and lingering death to fido. So IF you feel compelled to give your dog chicken bones, make CERTAIN they are pulverized into an almost dust-like consistency before mixing it in with their food. The bone meal, along with the marrow, is actually very good for dogs. It is the delivery method that must be VERY careful in its delivery method. Sorry if I sound like a worry-wart but I HATE animal cruelty and ignorance is NEVER a good thing when feeding a pet. They rely on US for their feeding and healthcare (as required some times) so if you have a pet, you OWE it to them to NEVER place their wellbeing in jeopardy by ANY means.

WOW, tonight is my first time to make dehydrated chicken (jerk)! What a fantastic idea and so simple but I don't think I would have thought of it quite yet since it's my first go at it. Not sure I want to put something with nitrate in my food... if the jerky is frozen would it be OK with just Himalayen or Celtic salt?... you think from your experience???
If you keep it in the freezer, there is no need for any nitrites or prague powders. I have never used them. Only salt. Also, depending on where you get your chicken it is likely already saturated with a mild brine solution if you buy them from the store.
First time using your simple way of making chicken jerky, taste great. Thanks cut chicken into strips, put into salt water brine for 15mins, dehydrate for 7 hours, then put in 200 degree oven for 5 mins just to be safe
Chicken is safe at 165 F so I usually dehydrate at 170 F for 3 hours to cook it, then wipe condensation out of the dehydrator and lower temp to 140 for 8 hours. Works great!
Yup! As long as you do a good job to trim the fat or finish it in the oven or if your dehydrator gets hot enough. Fat doesn't dehydrate well so it can go bad fairly fast if not eaten quickly and stored in the fridge.
damn this is pretty cool, I think i'll be making chicken jerky soon the only reason jerky for me is an issue is cost but this makes it seem much more cost effective. Great video man

I'll try it out when I go visit family. For the people who were flipping a shit over him using a metal bowl, you only worry about that if he's using really strong citric acid which will pull away metal into the food, BUT its highly dependent on the metal. He's not using lemon, so its not going to rust if that's an iron bowl. If it was copper, it'd simply clean the metal, nothing harmful. Steel is what is highly susceptible to having it's alloys pulled and dissolved, but it had to be a powerful acid like found in a lemon. So theoretically yes, it's better to do everything in a ceramic bowl, but he's not using the kind of acid that's going to cause damage or get metal flakes in food, so please do your research before you try to chew someone out. You didn't even bother asking what he was using. Now the salt issue with dogs, yes that's real. Dog's can't have a lot of salt and there are side-effects that are pretty bad if a dog has too much salt, but seriously people, do you honestly think this owner is not aware of caring over the welfare of his animal? Everyone whose had a pet, has treated them to something in small doses, and that's what he's done. It's not an issue for the animal to get a small treat, its like us drinking coke products on a blue moon: the stuff has chemicals related to Alzheimer's disease and other bad stuff, but its tasty and we'll drink it once in a blue moon to sate our sweet tooth. Stop being so damn nosy in people's personal life, trying to dictate and assume people before looking at yourself. For real!

Always follow the recommended usage and warnings of your particular dehydration unit, but as for mine sure! I have had to leave it on for much much longer before and I haven't ever had a problem. :)
put L.S. in a sprayer bottle with fine mist you can delute as you see fit with water spray at end of cooking cycle while meat is hot and let dry while cooling
Robbie I use to make our family beef jerky in the oven when I was a kid. My mom wouldn't let me make anything on the cooktop when I was 7 (and knew how) so she would let me conjure up some jerky meat, season it the way I wanted, and she'd throw it in the oven because it was less hassle for her, lol. I really wanted total access to the kitchen, too! All my family said was, "When you going to make that again??? lol

Running the dehydrator costs much less than an oven. Running an oven at 160 overnight is less energy than running the house heater. That’s for an electric household. If you’re truly worried about cost, take a look at how much commercial jerky is per lb. Homemade, even factoring in the fuel costs, is at least 40%less… plus you can control the meat source, the additives and flavors.

6 hours is good. 12 hours your over drying them ... I have mine at 165 degrees and around 6 hours same thickness as this video maybe a little thicker even.
Thank you for good advice. So, if I want some chewy consistency, I take them out soon and if I want crispy jerky, I take them out later. Sounds logical to me.
Stainless steel, ceramics, and glass are considered "non-reactive" in the kitchen, while vessels made from aluminum, copper, iron, and steel are considered "reactive". The latter category are reactive with acidic and alkaline foods (lemon and tomato, for example). The result is that these foods can take on a metallic taste.

If you cut lil thick you can pound flat giving you more surface area and quicker drying :)

I did this... and instead of just using water brine.. I used what I call "Chicken Juice" Chicken bullion (flavor)
