  • We demonstrate a jerky recipe that has been in our family for several decades--quick, easy, and delicious! We have had many requests for this video and are pleased to finally bring it to you.
    Products:
    Magic Mill Food Dehydrator with 7 Stainless Steel
    Jerky Recipe
    A 3-5 pound boneless beef roast sliced thin
    1 cup Worcestershire sauce
    1 cup soy sauce
    4 tsp black pepper
    2 tsp liquid smoke
    1 tsp dried onion chips
    Soak meat strips in marinade overnight. Spread on dehydrator trays and process on high setting for several hours until dark and dry.

    I’m a widow and I found your channel a few months ago . So I spent New Year’s Eve watching your video’s that I haven’t seen . It was one of the most enjoyable night’s I’ve had ringing in the New Year . And you’ve given this 69 yr old the nerve to try my hand at pressure canning. Thank you ❤️❤️

      I am 72 this month, and returned to pressure canning this autumn after many years of being “just too busy” to do it. The beautiful jars of home canned beef snd veggies are their own sweet reward!

    OMG I'm so excited. I just got a dehydrator for Christmas and we also got freezer beef from a local farmer. I want jerky to be the first thing I make in my new dehydrator. Thank you so much for sharing!

      I know this feeling! I'm not at all trying to be a "know-it-all" Rebecca, just a detourer of my mistake if at all possible!🙃
      I just wanted to share my first experience mishap, 😔, I to wanted to have homemade jerky. To be honest, it was the biggest reason for me buying myself a dehydrator for Christmas. But I didn't heed what I was advised to do first by a family member. I was advised to run my dehydrator full of fresh bread long enough to make "breadcrumbs". It's just to remove all the "new" scent that might otherwise change the flavor of "more desired and expensive" foods into something undesirable. Still safe to eat but you won't want to!😁 I just washed my racks, liners, and inside my machine with hot soapy water. And went for it. Results: A batch of beautiful beef jerky with the weirdest taste 😳 even my dog had to think twice before eating any. So then I washed it all again and ran it full of bread until I could crumble it easily and I fed it to the chickens. Afterwards, I've been enjoying jerky ever since. Even summer faux jerky...
      Sliced zucchini soaked over night in marinade (Your choice of the recipe, I'm trying Mrs Pam's next time) and dehydrate until your happy with the end product. Sorry such a long comment, just wanted to mention. Happy New Year and Dehydrating! God bless.

      Always run any new appliance for a bit when new ...Toaster, dehydrator, etc..Anything with plastic or rubber parts and/or a motor.... to get that new smell out of it..

      Just an FYI, this is NOT the same as store bought Jerky. Most Jerky is smoked or partially cooked then dehydrated..which actually cooks the meat a bit... this style jerky is totally different taste... It will be VERY tough and stringy and taste super salty... (I learned doing it this way first decades ago and it never tasted that good.. then a friend who was a pro at jerky laughed when I told him what I was doing and said I'm pretty much just drying out raw beef soaked in tons of liquid salt and acidity (Worcesteshire sauce) .... comes out black almost... to each his own but please let me know if you agree after your first batch.... Never made it this way again after that

    We have been making a lot of beef jerky and our recipe is almost like yours. The only difference is we add 2 teaspoons garlic powder and 1/4 teaspoon red pepper flakes for the same amount as what you made. We backpack, ski a lot and like taking jerky with us because it's a light weight food. Works well with venison and elk too. Have done Excalibur dehydrator and a smoke house.

    I am so very excited to see this! I rarely purchase it in the store because of the extraordinary prices (which have gotten worse lately), and I need to know how to make my own. Thank you for educating us as you do.

      Yes! My son and I went on a road trip and I mistakenly told him to grab whatever snacks he wanted. He went straight to the jerky section, I had to yell out " Except JERKY!" His response "I wasn't going to grab it after seeing the price."
      Jerky was expensive before but now.......it's just unaffordable completely

    Oh, Pam, I relate to you so much! When I listened to your recipe for jerky, I had to run to get my cookbook to see how close it is to the one I’ve made for years. How did we survive all of the years before the USDA imposed such strict rules on us? By the rules of today, I’d have to throw out all of my old equipment and start over, which would never happen. We worked and saved too long for them in the first place! Now, my daughters have shown an interest in putting food by so I encourage them to carefully follow the rules, and take advantage of your vast knowledge by following your channel.

      My thoughts exactly. The fda would faint and die, if they saw how my mom grew up. She said they hung their meat to dry and it would get worms in the outside of the meat, she said they called them squirmies and she said you just cut that part out and cooked the rest and you would be fine. They grew up their first 20 years of so with no electricity or running water and were just fine. When people were living in caves - they didn't have the fda to run to for advice as they were cutting up their Mastadons, really !

    I love making jerky. It’s just my husband and I so I portion it out in seal a meal bags and throw it in the freezer. It thaws out fast.

    Thank you for this…my husband loves jerky, but I have hesitated to try making it because of safety issues. If you do it, it gives me confidence that it will be ok!
    I do have a commercial meat slicer, I think I’ll use it for this.

    A few years ago my SO and me went on a vacation to the States. Jerky is pretty much unknown in Continental Europe so he didn’t know it. I knew about it, having been introduced to jerky by American friends. He loved it and looked for it when we returned home. The price is so high here he almost choked.
    I only just got a dehydrator and am planning to make a few small batches of beef jerky for him as a Christmas present. I’ll make sure to include your recipe!

    This is very similar to my husband's recipe. He's been making it for close to 30 years. We also make and send it off to our kids, usually for birthdays and Christmas. One thing that he started doing for the marinade is putting it in a giant bowl. That way he can make sure each piece gets well covered. Happy new year!

    OMGosh, I came across your vid a week ago, and I did it in my old 6 tier round stacking dehydrator. This was fantastic!! I didn't have as much meat as you did, so I only had to use 4 round trays. It turned out just like you said it would! Yay... the only thing I am going to change in your marinade recipe is the amount of pepper. It was a bit to spicy, but I've already eaten a few pieces! And.... I put mine on at 4p, got home from work, at 8p, and it was just like you said it would be!! Thank you so much. Easy, peasy, and it is my favorite snack, without the money being a factor..

I don’t think I’ve seen this commented on before, but I really admire that you recommend products, simply from the standpoint of you liking them, and not for any financial gain. We all know you are missing out on revenue or free products by doing that. And it’s very admirable. However, I don’t think any of us would care one bit if you and Jim got a few well deserved kickbacks.     I have been thinking about making Jerky son-in-law has been asking for it, I add a tablespoon honey and red pepper flakes and smoked paprika to the same measurements you have, delicious, I also make my own worcestershire sauce better than L & P's. To any one out there you can do it in the oven if you do not have a dehydrator, lowest setting you can get, just keep checking it. I drain the meat and pat dry with paper towels before putting it on the trays saves dripping. When slicing meat make sure it is part frozen and slice across the grain, makes a more tender jerky. Now did you send your son home with any or did he eat it all before he left. Love your personality Pam. Good informative video. Now I have to go thaw the eye of the round I don't feel like cooking but makes excellent jerky.

    I wanted to thank you for being such a good teacher! You are very through and explain things in a way I just get it.
    I loved your video on canning in the Instant Pot. You gave me the confidence to start canning. I make and use so much chicken bone broth that I was running out of room in my freezer, so now I just can it.
    My son just loves jerky and he wants us to make it. I always come to your channel first to see if you’ve made a video on it. I do other research as well. Thanks again.

    You are such a beautiful person inside and out. It just shines through you. You give good vibrations. Thank you, I’ve got the first batch in the dehydrator and my entire 600 sq ft apartment is permeated with that wonderful aroma. I used Mongolian soy sauce which I love, and followed the recipe to a T. I am also a cook. I’ve been exposed to cuisine from all over the world. I grew up in a Shell Oil town in Maracaibo, but my parents were from the British Isles. Mom was European, pop was Chinese. My diet is a fusion extravaganza, but beef jerky can also be added to stir fry. I remember my dad slicing strips of jerky paper thin, I think he put it in his consommé soup. 😆 it reconstitutes in water.
    Anyway, stay beautiful, stay strong.

    Pam I have made this jerky, had the butcher slice a rump roast for me. You were correct on all counts. The hardest part was covering all pieces of meat with the marinade. Girl. This is wonderful! We are really enjoying it Thank you for this recipe, it is a keeper.

    Your washing your hands is one of the things I like to see you doing when you are cooking. I know that you are usually careful with temps and time, but it is nice to see you washing your hands before and after handling things.

    Good video. Thanks for sharing. I store my jerky in vacuum sealed bags in the freezer. My husband loves the black pepper recipe, similar to yours. I use the restaurant style pepper instead of ground, he likes the bite from a bigger grain (?) of pepper. Yep, he's a happy camper when there's jerky in the house. My new dehydrator, Cosori, meat setting temp is 165. Usually takes about 5-6 hours. Love your videos!

    I could not let this video go, without commenting. Thank you for this one! My dad made jerky my whole childhood and like your family, it never lasted very long. He didnt have a true 'recipe' so when I was grown and wanted to make my own, I had a terrible time with the seasonings. Id ask him and he would say, "just add a bit of this or that". He always used skirt steak.
    Ive made my own for almost 50 yrs and it never comes out the same from 1 time to the next. I found skirt steak too costly so I started using brisket. However, there was so much fat and other waste that it took hours to get it all cut.
    For the last 4 yrs, Ive used London Broil as it has almost zero waste, but still I cannot get the seasonings right. My family have asked for 'flavored' jerky, ie: teriyaki, hickory smoked, lemon pepper, etc. Ive tried liquid marinades, dry rub-style marinades and still just not right.
    If I used your recipe, Id have to tone down the pepper, but how would you go about flavoring jerky? Im curious if youve ever tried.

    Thanks so much for this video! We have left over roasts from last year and this is perfect timing for us! We are going to add red pepper flakes to add heat to ours 😁. By the way, I sliced mine partially frozen with a Mandolin slicer and it worked lovely!

    Pam you are a true inspiration…..tk you and Jim for another great video…..he is certainly a big helper!!! Someone gave me a dehydrator years ago and I still haven’t used it so I’ll think I definitely will try this, however, I don’t have a good set of teeth so I don’t know if I’m going to be able to chew these 😂😂😂😂👵🏻, but for long-term storage and if you’re hungry, you’ll manage and eat anything… right? I’ll be vacuum sealing mine in jars…..God bless

    Pam, you are a joy to watch. I learn so much from you. I want you to know that you have gotten me back into pressire canning, and water bath canning. I had the opportunity to buy some pears 52 pints of pears that included jams, jellies n marmalade. It is wonderful!!! I have also started some raised beds and have canned several qts of green beans. Thank you for giving me the knowledge and the mind set that I can do this. My next challenge is the beef jerky. You make it look n sound so easy. Thank you again for all you and Jim do.     Wonderful sharing again. I make jerky with no marinate as my son who takes it canoeing can't have spices/seasoning. It is always so delicious and gets eaten very quickly. I will try your recipe for the rest of the family who don't go canoeing and can have spices/seasonings!

My husband bought me a Samson dehydrator for Christmas and my birthday which is in Dec. 😍 This thing is the best one, quiet, lots of space and does a wonderful job.     I was excited to see your recipe. I haven't made jerky for about 30 years. I made it for my kids out of deer meat. My recipe is almost the same as yours, I used fresh squeezed garlic instead of onions and red pepper flakes instead of pepper. The other ingredients are the same. I had the butcher slice some of the roasts into carne asada, hoping its thin enough to make jerky.

    If you haven’t tried using Caraway seeds (heavily) to season the meat, I highly suggest it….I use a small amount of Dales marinade with a heaping helping of Caraway seeds soaking overnight in a gallon zip lock bag, in refrigerator….you should try to make sure you drain bag and get as many seeds from it to put back on the meat before starting dehydration….the seeds will continue to season the meat during drying….and can be eaten or brushed off after meat is ready, (depending how you choose to eat it)….I like the burst of flavor the seeds give….really great flavor on meat….people who tried my jerky really loved the taste….

    I have 3 dehydrators, all the round kind. I put the solid sheet on the bottom shelf of my dehydrator, and then use the plastic net ones on all the other shelves, especially when I make jerky, because it is messy! The bottom one saves cleaning the fan part of the dehydrator, and the net ones make it easier to clean the shelves. I made jerky and put it directly on the shelves, and not only was it hard to pry it off the shelves, but there was so much scrubbing of the shelves, even after soaking!

    I got my first dehydrator to make jerky for my sons when they were Scouts. I always used super-lean beef and soy sauce, brown sugar, and liquid smoke. (I would have cut those strips lengthwise again, but that is me.) I also 'knead' my beef strips as they marinade. Smart about the gloves. (HEADSMACK!)
    I had to replace my dehydrator when I had my grandson with me, who was also a jerky fan,and mailed it to him when he was away, also. My newest dehydrator is used for veggies, fruit, eggs, and even as I type, more sour cream is dehydrating.
    Thanks for the laugh and not editing out about your "butcher", ( I hope that he isn't a complainer!)
