For large batches like the one you're making, you should remove the dough hook extender so the dough has room to "knead". Otherwise, it does not have space under the hook for the dough to fold under itself. For a really slack dough, like the one you have, it's not as noticeable, but once you move to a dough that is less hydrated you will notice.

I've got the same one no sweat for 2kg of flour , the only issue I've with it is the noise ... Too loud!! I think that it mostly generated from the blender attachment... Thinking about taking it apart so the blender will not spin during mixing...

Thanks for watching. I had a KA mixer before this bosch and it broke on a small batch of dough. I should upload the video. Right out of the box, used it once and broke. It's good for mixer but definitely not good for kneading.

Bosch makes a piece called a dough glide to prevent the dough from turning black.

When working with wet dough wet your hands too and it will not stick to your hands.
After machine kneading why didn't you let the dough rest in the Bosch. Why remove it?
