Hi there. Typically the recipe requires the chicken to be fried. I am not sure if baking the chicken will achieve the same taste as frying 🙂. I have not tried to bake the chicken for this recipe.

I love Asian/Chinese cuisine and I’m always inspired to try and make new things. My orange chicken turned out great but for some reason the lemon sauce was a bit bitter. Hi there. When you zest the lemon, make sure that you zested only the thin yellow part of the lemon skin. If you zest too much of the lemon skin this will contribute to the bitter taste of the sauce. Hope this helps 🙂
Hi there. I have tried to substitute the custard powder with tapioca starch and corn starch but my family prefers the custard powder more. Somehow the custard powder gives the dish a much better flavour and aroma as compared with the regular starch flour. It goes really well with the lemon sauce too. Hope this helps 😊

Hi Norah, sorry to be so long but this lockdown lark has made shopping in the UK a right caper. Queues have been dreadfull. This recipe we can do but could we use cornflower, milk powder and vanilla essesnce instead of ready made custard powder ? My chow mein is quite edible now and I think it would be nice with Lemon Chicken. Hope you are well - JP
Hi John 😍. It has been a while, really happy to hear from you again. I did on a few occasions make my own custard powder for the Lemon Chicken recipe but only when i am out of custard powder in an emergency 😉. The mixture is a combination of 1 Tbsp Corn Flour, 1 Tbsp Milk Powder, 1/4 Tsp Salt and 1/4 Tsp Turmeric Powder. This mixture is enough to substitute the amount of custard powder used in this recipe. I then add about 1 to 2 drops of Vanilla Essence to the lemon sauce. I also added 1 to 2 drops of vanilla essence to the egg mixture before adding the chicken to the bowl. The taste is almost as good as using custard powder. Let me know how it goes 😀. I am sending hug and kisses to both you and Maurn. Take care now 😘
@@NorahsCookingDiary Thank you Norah. I'm going to be honest. The reason we don't have any custard powder is that we buy it ready made in litre boxes. It's not expensive and we buy a dozen at a time. Our milkman has helped a lot with things like spuds, bread and veg. Some things though vanished, no bread yeast anywhere but we have some now. We have only left the house 4 times in around 3 months. It was my 74th birthday on Wednesday and I had a goose egg on fried bread with another on the top. That's what you call a real sandwich. We might wait until we get the custard powder as we don't have the Tapioca flour, we have everything else. I think we are on about No.5 or 6 of your chicken casserole. Do take care and look after yourself and family.
