This is authentic, with the exception that we used to use a bit of lemon curd to thicken the scause up a bit. I doubt many people have a Turbo Wok. The secret to great Chinese cooking is that wok with its crazy hot heat. Most of the ovens and ranges in the western kitchens, are incapable of reaching high temperatures very quickly, and as a result whatever its put in the wok lietrally boils in its own juices rather being stir fried. If its practical just use small quantities.

For what it's worth, you can achieve the same thing by using a vegetable peeler. You won't get the long picturesque strands, but the flavor will be the same. From someone who actually made the lemon chicken recipe: it's the best lemon chicken I've ever had, and it wasn't that hard to make! For the lemon peel, the trick is to use a really sharp knife and keep your palm open so you don't hurt yourself, and go slowly but confidently. Avoid excess sawing motions, and try to just scrape layers a little at a time until you're at the yellow peel. It's worth the patience!

@@bikeguyirl4443 Sure. Nothing wrong with that. But people shouldn't be put off from trying what is actually a very simple recipe just because they don't have the godlike knife skills to attempt one very showy part that does almost nothing to change the finished flavour. Literally the only reason for all that showmanship with the knife is to produce the visually appealing little shreds of lemon peel on top of the dish. Zesting or peeling the lemon normally won't change the taste in the slightest.

I'm 100% positive that no Chinese restaurant I've been too has ever put this much effort and craftsmanship into either of these dishes. Really enjoyed the slow-mo egg and chicken drop.
A lot of Chinese "restaurants" in western countries are run by people who are NOT professional chefs. They're immigrants who for whatever reason couldn't get jobs in their original professions so just opened a restaurant because it's an easy way to make money even fi you can't speak the local language. In this video one guy said his dad was a carpenter back in China... th-cam.com/video/Ii9o8B_9sXo/w-d-xo.html Pro tip: if you want real Chinese food but aren't familiar with it, look for the places that have large groups of east-Asian-looking customers who've ordered a bunch of stuff and look like they're enjoying themselves. And I'm saying this as a Chinese Malaysian person who lived in the USA 12 years and South Africa 5 years.
@@megabigblur "Easy way to make money" Man, you've never worked in one have you 😂. At best, I'd correct you with the job as the most accessible to the migrants but certainly not the easiest.
Oh man, how far from the truth you are... Most kitchens I've worked at, you'll always find a worker or 2 which can carve flowers out of beetroots or even make a buddhist fruit figure out of a melon but the truth of the matter is, most people don't want to pay for quality, at the very least not often where these takeaways are opened. You'd be very surprised what the average wok chef can do in a simple chinese takeout. You'd cry abuse just working in it's kitchen for a day 😄

Producer: How many chilis do you need?
Chef: Yes
2 pcs is enough, but 2 pcs does not give the red look. So 35pcs.
I don't think I will survive that many chillies.
What do you mean by yes? Say the quantity
Am I the only one who doesn't think that's a lot of chilli!

I totally respect him because I love the way how he just lets his talent and caliber speak for him and not like other billionaire chefs who just tries to make things look more exaggerated by talking more than cooking. Total respect and love from India Sir. 💚💛💛💚 . Hats off for the patience and skills that he displays in each of the videos. It's a true form of art.

Thank you for the feedback! Glad to hear the lemon chicken recipe turned out great for you. 😊

Love the idea of using custard as a thickener. Will definitely try the lemon chicken recipe.
because the custard powder has yellow food colouring and is corn flour too
@@AdheelC Yes, and it also dissolves much easier in liquids;) Corn flour/starch in its pure form dissolves more easily if turned into a slurry (mixed with water, in case someone wonders) before thickening a sauce.
@@MrQuagmire26 nothing worse when people dont dilute the corn starch...-_-
Is it the same as cornstarch?
I'm trying learn how to do this. I'm planning take over my parents Chinese restaurant in Ottawa. It's western Chinese food. And anyone that worked or owned one. Things are very complicated to the younger generation. Especially when someone starts learning early 30s
I gave up trying to cook this when he brought a cleaver to cut the lemon
Thanks for the joke actually Satan
That whole part is totally unnecessary. Just use a lemon zester and you'll get exactly the same results in terms of flavour.
@@VoroxPeteI just use the force to cut the lemon
You see a lot of cooks in Asia using one knife at home or at food stalls
@@bikeguyirl4443 Sure. Nothing wrong with that. But people shouldn't be put off from trying what is actually a very simple recipe just because they don't have the godlike knife skills to attempt one very showy part that does almost nothing to change the finished flavour. Literally the only reason for all that showmanship with the knife is to produce the visually appealing little shreds of lemon peel on top of the dish. Zesting or peeling the lemon normally won't change the taste in the slightest.
I love cooking videos that show just the recipe and technique. I just want to cook a delicious meal and learn how to do it in under five minutes, not listen to someone talk for half an hour. Thank you! Love your videos.

@@empirehitsquad1257 My money is on Chef Zhang: the way he cuts the lemon without losing his fingertips with that butcher knife is the sign of a true Master Chef. Ramsay could learn much from John Zhang.

A lot of Chinese "restaurants" in western countries are run by people who are NOT professional chefs. They're immigrants who for whatever reason couldn't get jobs in their original professions so just opened a restaurant because it's an easy way to make money even fi you can't speak the local language. In this video one guy said his dad was a carpenter back in China... th-cam.com/video/Ii9o8B_9sXo/w-d-xo.html
Pro tip: if you want real Chinese food but aren't familiar with it, look for the places that have large groups of east-Asian-looking customers who've ordered a bunch of stuff and look like they're enjoying themselves. And I'm saying this as a Chinese Malaysian person who lived in the USA 12 years and South Africa 5 years.
@@megabigblur "Easy way to make money"
Man, you've never worked in one have you 😂.
You'd cry abuse just working in it's kitchen for a day 😄
Travel to Shanghai or any other major Eastern Asian big city. There are world class chefs and world class restaurants on every block.
This is beautiful to watch. I'm guessing he takes the chicken out briefly to let it keep cooking without burning the outside. I've never seen that before. That knife is the bomb.
It always looks so peaceful when he is cooking, like someone that is meditating.
Meanwhile my kitchen looks like war zone
Cook long enough and you can find that same zone.
