250 grams chicken breast
1 tbsp soy sauce
5 grams salt
2 grams black pepper
3 tbsp cornstarch
1 piece medium egg
Sauce
100 grams orange juice
40 50 grams lemon juice
100 grams sugar
10 grams custard powder
Oil for frying
Lemon slice for garnished

Im a 40 years old Malaysian and lemon chicken was a treat when my family or relatives took us to posh chinese restaurants. I would wait for the lemon chicken to arrive, sometimes it came after all the dishes, sometimes it was the first dish served. The anticipation of waiting for one dish out of all other dishes... ahhhhhhhh... good old days.

Is there any substitute for custard powder for the sauce?

If you mean cornstarch, I, myself have used potato starch to thicken sauce, but I can't speak for these cooks.

Yes. You can use cornflour (cornstarch). However you are taking a 10/10 lemon chicken (with custard powder) to a 5/10 lemon chicken without. Custard powder is the secret ingredient that really makes the whole dish - don't swap it for an inferior substitute unless someone is holding a gun to your head.
