When I see a fall sale on red peppers, usually around .99 cents a pound, I fill up my shopping cart. I cook mine on the BBQ until they are charred nicely and let them steam in a pot until I'm able to handle them and peel off the skins and clean out the insides. I FREEZE them in airtight containers, you can use jars or Ziploc bags as well, and they thaw out nicely and taste just like the day you packaged them. Although it can be a big job processing so many peppers, having yummy red roasted peppers all year round is wonderful and makes for a quick and easy side dish to your pasta, sandwiches, etc. Bon Appetite!

4:40 into the video Gina you are holding the oven mitts backward. The larger pad is thicker than the smaller one. The larger one will protect your hands and wrist. Give it a try! Love watching you and cooking your dishes. You cook just like my grandmother (Mom Side). She was from a small town near Bari. My Dad is from a small town in the Naples area.
Gina, I never thought to use a pan with a lid to steam and loosen the skins...I grew up using brown paper bags to do that job, I will be using my pan when I make them again for my family. Thank you for sharing and always bringing me back to my great grandmothers kitchen where food and Love were always served.

I love you Gina, your channel is still the only one that I subscribed to, I got the notification half an hour ago while I was on a telephone call and of course now that I got a chance to watch the video and write something, lots of other people have written already so I cannot be the first one to comment but maybe next time I can :) My mom makes similar dish in Hungary, but I am sure yours is just as good if not better. It brings me joy to watch your videos and I have watched every single one of them, (multiple times even). Sometimes my eyes get very watery because you talk about the people in your life that you miss, people that are no longer with you, you say that they are in heaven now, it brings tears to my eyes because I know what it's like to lose people, having lost some myself. I think about you and always hope that you are in good health and that you will be in good health for a long time. Gina I love you. You remind of my great aunt Anna. She would sing the old Italian songs. Make bread, pizza, pasta, cavatelli, Gnocchi, tomato sauce… all the things. You could ask for fried dough. She served it with powdered sugar. It was warm and yummy. My grandma made all the things as well 18:16 except bread. That she made herself. Grandma’s bread and pizza was better. But it was very rare she would make you fried dough. Grandma had a hard life because her husband was a drunk, cheater, and vagabond. So the dough for bread was precious to her as she had to feed her children and frying it meant less loaves. They truly are still my favorite people! “Thanks for the memories.”💕

I love roasting red peppers... either in the oven, over the gas flame on my burners of the stove, or even on the gas grill outdoors (but I miss out on the aroma when I do outside). Thank you for this video... it never occurred to me to serve them as a side dish on their own with a meal. Love this idea. Nona is a beautiful soul. I'm new here, but I'm learning a lot.

My mom used to make us sandwiches with Roasted peppers and eggs for Friday's lunch since we didn't eat meat on Friday. I also add minced fresh garlic..a must for me.
Gina, I wanted you to know the joy you bring to me. Your mannerisms and accent remind me of my grandmother. She immigrated to the U.S. in 1920 from Sicily. I wish when I was older, I could have watched her make the most delicious meals. Nothing came from a can or freezer. My most favorite meal was Sarda. She used fresh fish and anise. Every year, I would ask her to make it for my birthday. I have made many of your recipes. Each one was delicious 😋. Thank you for teaching me the recipes that bring back many wonderful memories. My Italian grandmother had a massive garden, grew many of her own vegetables, baked her own bread, made her own tomato sauce and pasta, she was amazing. My childhood memories were my cousins and I sitting at the kitchen table, chowing down on her roasted red peppers on her freshly baked Italian loaf. We couldn't get enough and Grandma never let us go hungry, always seconds and thirds in the waiting. Memories like that certainly do last a lifetime. Thanks GINA for helping keep healthy and homecooked meals alive in a world that has been headed toward "convenient" packaged and processed crap.

These are the best-roasted peppers that I have ever seen. You made me hungry just watching you cook them. I can not wait to fix this recipe to go along with our meal. My Italian grandmother had a massive garden, grew many of her own vegetables, baked her own bread, made her own tomato sauce and pasta, she was amazing. My childhood memories were my cousins and I sitting at the kitchen table, chowing down on her roasted red peppers on her freshly baked Italian loaf. We couldn't get enough and Grandma never let us go hungry, always seconds and thirds in the waiting. Memories like that certainly do last a lifetime. Thanks GINA for helping keep healthy and homecooked meals alive in a world that has been headed toward "convenient" packaged and processed crap.
