My mom always said if it wasn't for my blonde hair and blue eyes she wondered if they gave her the wrong baby in the hospital because I love Italian food so much. I miss her so much she's been gone now 38 years , I was 18 years old and I'm so happy I watched her cook even though she would chase me out of the kitchen at times. lol I have 3 sons and they say no one cooks l like me and I tell them my mom was the best cook ever. I've been making pasta and eggplant forever. I make it almost the same way. I do peal my eggplant, and I have not added the cheese in little chunks. I usually use grated. I love the Ricotta at the end too! I never had it like that, but I will try it the next time I make it. Looks delicious!!

Have you ever made caponata? It’s great on bruschetta, and pasta. I don’t can anymore so I freeze small batches when the eggplant looks good.
