INGREDIENTS
¼ cup (60g) salted butter
1 large lemon zest
⅓ cup (80mL) lemon juice
4 large egg yolks
1 teaspoon (5mL) vanilla extract
⅓ cup (65g) allulose or xylitol amzn.to/39Iix1R
½ teaspoon (1.5g) xanthan gum amzn.to/3N9aWH7
¼ cup (60g) softened salted butter
⅓ cup (65g) granulated erythritol or any sweetener of choice
1 large egg at room temperature
1 teaspoon (5mL) vanilla extract
1 ½ cups (150g) blanched almond flour
2 teaspoons (8g) baking powder
1 teaspoon (3g) xanthan gum
powdered erythritol
Bake at 350°F (177°C) for 30-33 minutes or until top is golden brown. Let it cool completely and refrigerate overnight.

-Utilizzare ⅔ della pastella come crosta e il resto per il crumble.
-Versare ¾ del lemon curd e versare il resto in cima alla mollica.
Cuocere a 177°C per 30-33 minuti o fino a quando la superficie non sarà dorata. Lasciate raffreddare completamente e mettete in frigo per una notte.

1 gros œuf à température ambiante
1 cuillère à thé (5mL) d'extrait de vanille
1 ½ tasse (150 g) de farine d'amande blanchie
2 cuillères à café (8 g) de levure chimique
1 cuillère à café (3 g) de gomme de xanthane
érythritol en poudre
-Utiliser ⅔ de la pâte comme croûte et le reste pour le crumble.
-Verser les ¾ du lemon curd et déposer le reste en haut de la chapelure.
-Cuire à 350°F (177°C) pendant 30-33 minutes ou jusqu'à ce que le dessus soit doré. Laisser refroidir complètement et réfrigérer toute la nuit.

I made this for Father’s Day. The whole family loved it. I did make one change. I don’t have xanthum gum so I used flax eggs instead. 2 for the custard and 1 for the crust. Came out really well. I need to make it again when family is gone so I can eat it all for myself!

Hello Amel, you can definitely use agar agar or powdered gelatine instead of xanthan gum. ❤️
It looks delicious and I’m not trying to take anything from your recipe but the sweetener xylitol can and will kill a dog if they Ingest it. I know a lot of people love their pets and sometimes want to share a little bite with their pets but it’s deadly, Just thought I would share that.

Question: can we substitute the allulose or xylitol with another keto sweetener like swerve for the lemon curd or will it mess it up?
I think the reason why she used allulose is to avoid crystallization, to keep the lemon curd smooth.
I’ve made lemon curd with an erithitol / stevia blend and it came out fine 🍋
You must refrigerate the cake overnight. I think the allulose will give the curd the soft jelly like texture. I made lemon curd with erythritol before though it works but it didn’t maintain the smooth texture the next day.

According to Google I can use agar agar instead of xanthan gum. Has anyone here ever done that and could share the result? I'm out of xanthan gum.
Agar agar is more like adding jello. If you have it Tara Root Gum can be subbed. Otherwise try psyllium husk powder...it may effect color. Konjac/glucomanen powder we could work only use half as much.
