    I find that with desserts like this I'd rather make just the filling placed in little cups...I'm not into crusts so much. Looks super delicious nonetheless!!🥰♥️💐👍

      Try toasting the almond flour. Smell really good. I made crumbles instead of the crust like you said.

    I had planned to do a low carb lemon cheese cake this morning because my brother, among those who are coming to have lunch today, is keto. I had gotten some gluten free flax chocolate chip cookies yesterday, so I lined my glass pie pan with those, and then I put the cheesecake mixture on top. I subbed more lemon juice for the cream and used both 8 oz packs of cream cheese. It tasted yummy off the spoon, It's in the fridge and I'll have to see how it goes over when we cut it this afternoon 🍋🌹

    Thanks for sharing this recipe. I made it today. I like lemon flavoured cakes but this was indeed very lemony! I will use a bit less lemon juice next time and see how that goes. They don't seem to sell Allulose here in Australia, so I used my coffee grinder to turn my granulated erythritol into powder. Even so, I could detect grittiness in the batter as you had explained in your notes. I also didn't have a springform or loose base pan so it was a bit difficult getting the cheesecake out of the pan .I ended up putting it in the freezer for a while and that enabled me to turn the pan upside down and shake it out. onto a plate. I did enjoy eating it though! It's very rich and creamy and the cocoa powder in the crust wasn't at all detectable in the flavour, just added a contrasting colour, as you said. I sprinkled some nutmeg on top and next time I might put nutmeg and cinnamon in the crust for a change instead of the cocoa powder.

    Thank you very much. Absolutely delicious, I made this yesterday for the first time.. I have to be disciplined with it as I always loved cheesecake and this one is beautiful , being on keto I gave up a lot of favourites. Out of all the keto deserts I have tried I have to admit this is my best yet. I didn't have cocoa powder but I had flax seed and that helped me achieve the desired colour on the base with the benefits of flaxseed to go with it. Used erythritol I just grind mind in a chopper to powder it , didn't have allulose and I have no complaints at all on the outcome. I might tweek it and add a bit more gelatin for more set and see how that goes. Used a 300 bloom one that i had in the recipe recommended amount. I looked at a few recipes and this was one of the simplest that I came across. 0ne happy customer here smiling all the way...shared with my friend also on keto and she loved it too.

    Looks gorgeous! One thing - a farmer told me never zest a non-organic lemon, as non-organic citrus is sprayed with a chemical fungicide called imazalil, which is carcinogenic.

      There's an effective alternative to organic fruits and vegetables. Soak them in vinegar and water solution and leave them emerged for 10min. rinse and scrub them with clean vegetable brush under running water. Please, do that even if you buy "organic". There's no way to tell what you're eating. It's not a regulating industry.

    This is fantastic, thank-you! 🤗 I've been a type 1 diabetic since 1978, and my son is also a type 1, since 2012. We both love cooking and baking, and believe that a diabetes diet, although needing consideration, should still be as tasty, and as enjoyable as possible.

    I used keto coffee mixture 1 tea sp and 1 tea spoon cocoa mixture in crust.
    Lemon juice 47 g
    And a pinch of salt in the batter.
    Rest is same. Just put it in the freezer. But omg just tasted the batter. I might die of intense foodgasm 😂

    Is Allulose the only sweetener that does not crystallize? My local store does not carry that namebrand.

      Yes, as far as I know. But you could still use any keto friendly powdered sweetener.

    I would love to make this cheesecake.. the problem that I'm having is I do weigh out my ingredients and when I weigh out 120 g, it only comes to little less half cup...if I had decided to measure it then it would have been one full cup according to your recipe. So, at this point, I'm afraid to continue with the recipe because I don't want to mess it up and I don't want to lose money because keto ingredients are so expensive.. but I do thank you so much for sharing.. obviously some people are doing it correctly, so maybe it's just me . At any rate, thank you for sharing.🙂👍🏿

      Thanks for sharing! If you weigh all the ingredients then it should be accurate. Cups and spoons are not the same everywhere and mine is based on US Cups. That's why I keep reminding to weigh the ingredients for accuracy.

    What can be used instead of lemon juice if we want to create a different flavor cheesecake? Does it have to be an acidic liquid or can I just use water?

      Apart from lemon cheesecake, I have videos for strawberry cheesecake, blueberry cheesecake, and New York cheesecake. You can find them in the CAKE playlist. For this recipe, you can omit the lemon juice and just use water for a plain version. OR add any suitable flavor of your choice but do not exceed the amount of liquid.

    Please😢tell me how you got the parchment paper off the bottom of the cake before cutting and serving? I need to know since last year the cheesecake stuck to the parchment paper. Thank you.

      You just need to make sure that you use the smooth surface of the removable bottom of the pan so that the parchment paper can slide off easily. Also, some parchment paper does not have a strong non-stick function, so in this case, you may need to grease it.

    In baking desserts when do you use Monk fruit and when do you use Allulose?

      Powdered Allulose is mostly used for frosting cream, cheesecake, etc, that does not require cooking as it will not taste grainy when chilled. Monkfruit can be used for baking and cooking in general. Granulated Allulose can be used for baking, too, except that it browns too quickly so the baked goods look a lot darker and not so appealing. Allulose is great for making caramel. Hope this clarifies 🙏

    I ordered from your listing here from Amazon but however it is not a powder? What did you in this video that does not crystallize? I thought it was suppose to be a powder but that's not what you have listed.

      Powdered Allulose has not been available in Amazon for a long time now. The link provided is for regular granulated Allulose, which you can just grind it further until powdery. If you do not have a multi grinder, you can use a spice or coffee grinder. In general, Allulose does not crystallize when chilled. As this is a no-bake cheesecake, we need to use the powdered form. Sorry for any inconvenience caused 🙏

      You can do that, but I am not sure about the amount as I have not tried it. I believe agar may be gummier, so you may need to use less.

      Oh that may be too much liquid as Allulose liquid is very mildly sweet. It wd be best to use use the powdered form.

    Great why do you substitute something that doesn't work? Why not at least say I had to substitute you will need to make into a powder! No I don't have anything to grind with! And how would I know that I need to grind it since I've never bought this before but I guess it pays to ask!

      Just to clarify, the link and the packaging did not specify that it is powdered or confectioners, so it is regular Allulose. There has been a shortage or totally no stock for lots of low carb products everywhere, so I also grind the regular Allulose myself (which is quite fine too) until powdered texture.
