This Shrimp and Broccoli Pasta is the perfect combination of protein and carbs in a simple home-cooked meal🍽️ . This recipe is great for clean-out-the-fridge days as you can substitute veggies and use whatever you have on hand. Your family will love this flavorful and fresh bowl of pasta featuring 🍤 tender shrimp, crisp broccoli and an easy breezy creamy sauce.
Ingredients:
• 200g spaghetti
• 250g broccoli florets (about one medium head)
• 10 medium-sized shrimp, peeled and deveined (about 90-120g)
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 3 cubes unsalted butter
• 1 small onion chopped
• Fresh Cream 1 cup
• 1/2 teaspoon red pepper flakes (optional)
• Paprika Powder 1/2 tsp
• Italian Seasoning 1 tsp
• Salt and pepper to taste
• Grated Parmesan cheese for serving (optional)
• Fresh parsley, chopped, for garnish (optional)

Instructions:
1. Cook the Spaghetti:
o Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
o Reserve 1/2 cup of the pasta cooking water, then drain the spaghetti and set aside.
2. Blanch the Broccoli:
o While the spaghetti is cooking, bring another pot of salted water to a boil.
o Add the broccoli florets and blanch for 2-3 minutes, until they are bright green and tender-crisp.
o Drain the broccoli and transfer it to an ice bath to stop the cooking. Once cooled, drain and set aside.
3. Cook the Shrimp:
o In a large skillet, heat 1 tablespoon of olive oil over medium heat.
o Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Season with salt and pepper.
o Remove the shrimp from the skillet and set aside.
4. Sauté the Garlic:
o In the same skillet, add the remaining tablespoon of olive oil.
o Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until the garlic is fragrant.
5. Combine Ingredients:
o Add the cooked spaghetti, blanched broccoli, and cooked shrimp back into the skillet.
o Toss everything together, adding the reserved pasta cooking water a little at a time until the sauce lightly coats the spaghetti.
o Add the lemon zest and juice, then season with salt and pepper to taste.
6. Serve:
o Divide the spaghetti among serving plates.
o Sprinkle with grated Parmesan cheese and chopped parsley, if desired.
