Can you use other displacement maps on top of the one you already created? You mean, in case you have some maps like nose, eyes or mouth that look better? How do you finish projecting the details so that the grid is no longer visible? In the minute 6:07 it don´t show anymore. Cheers. EDIT (I found a button to hide the grid)
Where did you get these displacement maps from? ITs difficult to find them on the internet. And if you do its very expensive like 50 dollars per map.

Is it best to keep the mesh symmetric until you finish the texture projection?
it depends on you, if you are working with symmetry from beginning then go with it otherwise fix each side manually

Maybe the uv is flipped after import

yes you can Use, just duplicate the projected layer and replace the texture

i am not familiar with the process of the blender to create displacement in it but i will learn for sure
