We have a chicken flock, I just made my weekly egg salad tonight. I cook mine on the stove top, but I have a Pressure Cooker XL and an instant pot. Hubs and I like egg salad sandwiches for breakfast. I use about 14-16 eggs and use a fork to mash mine up fine. Sweet relish and salt/seasoned salt, and I use dill too. Yum! ❤
This is my recipe with 2 changes I use yellow mustard and also instead of white vinegar I use apple cider. That is my base if I’m feeling froggy I put a teaspoon of sugar and a couple tablespoons of pickle relish. Have a blessed day and thank you for your video.
I did my eggs in an old fashioned pressure cooker in about 1 inch of water with the rack in the bottom . I let the cooker almost get to pressure and turned it off let it stay 4 minutes Perfect steam eggs thank you
Great recipe, I use Franks hot sauce instead of vinegar and sweet pickle relish instead of dill. Egg salad is a great recipe that you can add whatever suits your taste.
I don't have a Power XL but I do know they do lots of things well but you convinced me that I need to buy one just for hard boiled eggs! I've seen so many people on TH-cam say they know the secret to peeling eggs but they never demonstrate how easy their method really works. I was in total shock watching you peel those eggs! No one has ever come close to peeling eggs like that. WOW. I love hard boiled eggs and have peeled them for ages. I thought the trick was all about peeling them under running water. But your way is even easier. Thank you so much! I am subscribing to you as of this moment. Never heard of your JFG. I am down in Texas but I am going to start looking for JFG when we travel. My husband was a very picky eater when we met. After being together for 30 years, he's not as picky. When I make egg salad I add curry powder to it. I also add curry to my deviled eggs and chicken salad. Curry and eggs just love each other. Give it a try sometime. Thanks for sharing your video. You're doing great! You don't come across as nervous. You just seem comfortable, which is great. I would like doing a channel of cooking without cheese. My hue will not eat cheese so I have to adapt slot of dishes to work around not using cheese. Let me know if you do try the curry. Praying that you have a wonderful weekend.
I hope you have tried a quiche or frittata--with whatever veggies and/or meats you want. Also, corn pudding uses LOTS of eggs. I usually use frozen sweet corn.
New Subscriber - Your video came up in my que and I loved it!!! The next time I need hard boiled eggs you bet I’m going to throw them in the XL! I mean, I really haven’t used it for much anything else - I know, I know - LOL. My mother (now my personal heavenly angel) tried her best to teach me how to cook, sew, preserve food, etc, but I was such a tomboy growing up that I was more interested in playing outdoors, sports, climbing trees and beating up the neighborhood boys. I do remember some of her lessons though - LOL. BUT, one of the few lessons that Mama taught me, and would allow me to help her with, was fixing potato salad, deviled eggs or egg salad. I’m seeing a pattern here - LOL. For me, nothing was better than growing up in the mountains. Thanks for stirring up my fondest memories of helping my Mama in the kitchen with preparing egg salad or deviled eggs. (❤️😢❤️) Sorry for the long nostalgic trip back to the 1970’s. Anyway - Mama used JFG or Dukes mayo depending which was the cheaper choice - LOL. I use Hellmans. She made her own pickles & relish - mainly bread & butter & dill. For my recipe - I use chopped up bread & butter pickles, 1 tsp of the pickling juice (depending on how much salad I’m preparing), a tiny amount of onion (yellow), Hellmans mayo, Dijon mustard, salt & pepper . If I don’t have any bread & butter pickles, I use the kosher dills. Naturally, I sprinkle the top with smoked paprika to make to look pretty. The recipe is the same with my deviled eggs. We don’t eat relish in our house except on the rare occasion I pick some up if we have a hamburger/hotdog cookout. I’m usually the one that brings the drinks, paper products AND the deviled eggs to our get togethers - LOL. Also, I absolutely love that everyone shares their particular recipe, or variation, in the comment section. I was raised in Asheville (Fairview really), NC but have lived in eastern NC since 1987. I tried hardboil my eggs in a pressure cooker with steam like you suggested and I was shocked how easily they peeled. I cracked them slightly after cooking them and put them in the cold water. They peeled exactly the same way you showed on your egg salad video. Lol. I'm 70 years old and hated trying to make hard boiled eggs. But I'm a guy , so what do you expect ?? LOL 🥚🐣🥚🐣 Thanks again.
i have found if u place the eggs in cold water right after cooking and crack the egg around put back into water, the water will get under the shell ablnd it comes right off
I make mine the same except I use regular yellow mustard, I use DILL relish and in place of salt I use a very small dash or two of celery salt . If I add onion it’s either Red onion or green onion. And I do love Duke’s mayo, but also if you can find it, Heinz is really good too, but it’s hard to find, I got it when we lived in California, but now that we moved back home to Oklahoma, I use Dukes. I have never seen the DLR, where is it made?? Anyway, Egg Salad is one of my favorites and I think it gets a bad wrap sometimes!! Oh, and if I am only making a small amount and my Husband doesn’t want any, I like to change up the mustard and use whole grain mustard. That’s really delicious too! I have also used the Dijon but if I do, I omit the celery salt. I’ve even used some chopped up fresh Dill, that’s really good!! Hey, if you make a big batch and get tired of it before it’s gone, drain a can or two of tuna and maybe chop up a little celery, you will have really good Tuna Salad!! I like to eat egg salad and tuna salad on bread for a sandwich, or with my favorite crackers!! I also like to take stalks of celery that I have cut in half, and use it as edible dipping sticks!! Egg Salad is so, so good and an excellent source of protein!! Thank you for showing this recipe!! For those who have never made it, make you some!! And I’m with you on the Pressure cooker and hard boiling eggs!! It the ONLY WAY TO BOIL EGGS!!! ❤
Wow I am from S.C. Here we boil our eggs, Duke's mayo, A little Garlic Powder, a tiny bit of yellow mustard. I mash my boiled eggs with the old round tater mashed. The Garlic Powder oh my word makes it so yummy 😋
Of course. I place my metal egg tray in the bottom of the XL. Then, I place the eggs in the rack, making sure they do not touch the sides. I add about 2 cups of water to the bottom ( you don't have to, but I do) and I close the lid. Then I push the steam button, which gives a 2 min cook time. I start it and let it cook and please on its own. I rinse the eggs in cold water or put them in the fridge to cool. That's all there is to it!

If I may ask on your counter you have the glass containers for your flour and sugar , they look really large and I have had no luck trying to find some of those that will hold a 5 lb. or more bag of flour . I would love to know where you purchased those and if they are as large as they appear on the screen ?
Love egg salad, also really like the Chicago style egg sandwich they gently cook green bell pepper (some say onion, I like it, some say just the peppers) do scrambled eggs, just once you scramble the raw, just scootch and fold the eggs, don't really scramble them, before it 'sets' add the peppers (an onion if you've done) and cook them in until just barely 'done' (you want 'em done, but not omelet 'done' not dry on the outside, but close to, but not quite dry - then pop in your bread, they don't add mayo, I do, but often it's Miracle Whip... enjoy. It's not hard. Yours is like ours, (Gram & Papa on mom's side both from Kentucky - so not a shocker) is about the same, 2 minor differences, Apple cider vinegar not white, also we add a BIT of sugar in w/ the vinegar to mellow it just a tiny bit. (and probably 1/2 as much mustard) ok, 3 minor differences. I just wondered if you'd do anything way different... not really... still good video. :)
I'm surprised you don't make your own mayo w all those eggs. I tried once but need to get an immersion blender, it still came out ok. I make my egg salad almost same as you.
Beth, we too are overrun with fresh eggs. We've been pickling the majority of them. The largest batch we've done is 72 eggs. We wait till we have at least 48. You are so right when you talk about the difficulty of peeling them. I have several old school pressure cookers and wouldn't know how to "steam for three minutes". The Insta-pot goes against my Sothern pride. I don't own one. They just seem to have yankee-ism smeared all over them. However, seeing how those eggs come outta those shells may have convinced me. Not sure, I'd have to get one online as to not be seen buying one in public. You have my pledge and solom oath that an air fryer will most certainly, never cross my threshold. Thanks for the recipe! Your video popped up today and I subscribed to your channel and hit the like button. I have a power XL and the next time I make boiled eggs, I am doing it in my power XL. I have a question. How much water did you put in for 1 dozen eggs? Did you just cover them over the top of the eggs? I taught my husband how to make deviled eggs but he does not like peeling them since they usually don't peel easily. He is going to be so excited about this method! I can't wait to share with him. I have many different egg salad recipes. One of them I make like a spread. It has olives and onions chopped really fine. It is very yummy if you're an olive fan. I break eggs into a micro wave bowl whip them a bit with salt and pepper and micro- wave them -I stir once or twice depends on amount- when done I user a potato masher and mash till consistancy I want- then prepare the way U like- Easy for me cause Iam old
Sadly, it's your loss. You can steam your eggs on the stove top without a pressure cooker. Buy yourself a veggie steamer basket and use it in a pot, it works just as well. Or, you can roll up balls of tin foil, place in your pot, add a little water, place eggs on top, add eggs and steam away.
After cooking the eggs, I put them in ice water to sit: When I peel them after the ice bath, they come off easily without tearing the eggs up. I never use my instant: I boil them on stove top
Yes, if you don't get them out of the pressure cooker as soon as it finishes, that happens. I get busy and forget to get them out immediately sometimes.

I like to use my egg slicer and cut them twice and that works great for me!

Sadly, it's your loss. You can steam your eggs on the stove top without a pressure cooker. Buy yourself a veggie steamer basket and use it in a pot, it works just as well. Or, you can roll up balls of tin foil, place in your pot, add a little water, place eggs on top, add eggs and steam away.
After cooking the eggs, I put them in ice water to sit:
When I peel them after the ice bath, they come off easily without tearing the eggs up.

Yes, if you don't get them out of the pressure cooker as soon as it finishes, that happens. I get busy and forget to get them out immediately sometimes.
I’m too lazy to make deviled eggs. So I end up with deviled egg salad.
