I have been struggling with making hard boiled eggs my entire life and I just tried your method (bring to boil, add eggs, cook for 6 minutes, cover/sit for 6 minutes and ice water for 5, and roll the eggs) AND I’m so thrilled to say that not one egg was mangled in the process of peeling them!!! Coming abroad from Russia I was shocked to see that most people don't know how to boil and cool fast eggs after cooking to make peeling easier...you don't need ice....just drain out hot water and put pot with eggs under runing tab water....or just soak in cold tab water - it would work as well...now there r egg cooker, which make them cook on steam and they have timer too...since eggs are cooked on steam, the moment it switches off eggs start cooling ...it works well also ( no need of stove or lots of water)
If you don't have ice the cool down with cold water in a jar and shake the eggs in the jar when cooled then put back in cold water The shell will come off super easy
Hi Billy! I used to use the egg slicer the same way you do. Then I discovered using a pastry cutter! It’s great and a lot faster. If it’s only a two or three eggs I put them in a small low sided bowl. If more than that, I use a high sided pie dish. Going to try your recipe tomorrow!! Ciao!

I have one of these. When my grandma past away in 2010 I keep all her cooking utensils. Some of them I could not use because of age and some had rust. I took those and made wind chimes out of them. This looks amazing, will definitely be giving it a try. Thanks for sharing.

Put a cooling rack over a bowl and push the eggs through the grates. It works like a charm. I'm not a big egg salad person, but this looks delicious and I will definitely give it a try!

I like the over-the-top egg salad as you portray. More vegs is better- I agree. I think I would switch the black pepper for the white since another recipe suggested it when making a NY style. Being frugal with mayo is a great idea- didn't think of that. Thank you.

Thank you. Chopped dill pickle in deviled eggs and egg salad is so good. Will try your egg cooking method next time. I steamed for 12 minutes and only put in cold water as I didn't have ice. That methold peeled 100% easier than all boiling where the shell was hard to remove and took egg white off with it. I might need to get an egg slicer. I didn't know you could slice the yolk with the white and be done. Off to check out your spaghetti sauce recipe.
Seriously, buy an egg steamer. One dozen eggs cooked to perfection and easily peeled (no need to fuss with an ice bath).. It also makes omelets, poached eggs, soft cooked. Your recipe with the Dill pickle and Capers sounds delicious! Can't wait to try it.
I’ve always added dill pickles but the capers sound like a new winner for me. I like your need for your slicer:) I use the smaller gauge net bags when I buy lemons or limes. Just put your egg in the net and squeeze it through. Works great for me.
I grate mine on the big hole side of the box grater, works pretty good. The bag idea is brilliant 👍 My favourite way to eat egg salad is on what we call hard tack, hmm maybe you know it by rye crisp.

Yum. I will try that boiling technique. When I make egg salad I mix all of the other ingredients in the bowl together so you get them evenly mixed and flavored then I add the chopped eggs and mix. I sometimes add a pinch of cayenne and curry powder for a slight different flavor. Yum. Will be trying the 6 min boil-6-min wait and ice bath thing. I hate peeling eggs.
This is how I cook perfect HB eggs. Put eggs in pan and cover with water. Bring to boil and immediately cover, turn off heat and set timer for 14 minutes. When timer goes off, rinse in cold water, then add ice and let sit until they are cold. Try it. 👍🏼

A big hit for cookout is my egg salad sandwich salad. It's egg salad with the bread on the inside, in the form of croutons. I add some mayo to the croutons directly and let them rest together while i prep the rest. That time gives them a little crunch but not overwhelming. The eggs I get the yolks out and mash into mayo and get nice and creamy, but the whites I leave half larger slightly larger than croutons. When you look at it should see egg, not croutons. The rest of egg I chop to same size as onion and celery. (All of these I chop to same size as relish pieces, which i use instead of pickles.) I've only ever made with Dijon mustard but I'll try with both and check it out. I've never tried with capers before I'll probably try the next time I buy some for chicken piccata.. I also have tossed in some lemon zest to brighten it up but I also use black pepper in mine and I bought my first ever bottle of lemon pepper so I may replace with that if I make the salad this summer.

I've tried the boil/cover/sit method with an immediate ice bath and they're _never_ easy to peel. Perhaps I'm doing something wrong, but Alton Browns method works _almost_ 100% of the time. Maybe I'll try it this way _one_ more time, just to be sure.
I’m an egg salad lover. All great ingredients but lots of fresh dill and plenty of celery is the pièce de résistance. Btw, I run my hard boiled eggs through a fine net/mesh bag acquired at the market. I think I bought pearl onions and the bag was a bonus. Also love tuna salad.
Simple tip - use your airfryer instead of boiling the eggs in water. They come out exactly the same. Just hit the "egg" icon button on the control panel and let it take it from there.
Great technique for the shells, wanted to add that I saw a chef using a mesh/metal grid cooling rack to punch the eggs through and it’s like seconds to get the egg diced this way.

Egg salad tastes great on rye bread toast. I've been making this same egg salad (minus the capers, and maybe too much mayo. And no dill. Will try that.) my whole life. I even use the egg slicer! Classics are best.
I saw you lost just a bit of egg white escaping. I have found tapping the tip of a sharp knife into the ends of the egg to make a small hole will allow air to escape easier and they dont tend to crack. if you start with cold water, they wont crack but are very hard to peal, and the cooking time is trickier

In 1997 I was working at a place called the Old Consulate Inn in Port Townsend, WA. Our supervisor & the owner of the joint was rash & unreasonable in many ways but one summer day she told me & my colleague to boil & peel 6 dozen eggs for egg salad tea sandwiches. We were gobsmacked. However, somehow, I realized that we could boil the eggs, plunge them in a cold bath, crack & roll the shells...and they'd just slip off. What a relief!! The rest of the salad was a breeze. p.s. I lost my egg slicer like yours, so I use my potato masher.
Im going to try this. I like egg salad but I havent had it in years because its usually pretty sad looking. But this looks much better. I started steaming my eggs a few months ago and it makes a big difference. Plus you use a lot less water and that little bit of water boils super fast. I just use a bamboo steamer over a pot. Add maybe an inch of water. very simple.

I have to use an egg slicer, too. But I only slice once. I use a big fork when mixing which chops down the pieces of egg more, but I like the bigger chunks that remain.
Learned the hard boiling trick some years ago. Then, came the ah ha of cutting the eggs for the egg salad. I just put the peeled eggs in a bowl and use poultry scissors to cut them to what ever size I like. No mess. And make the fixings in another bowl, and add a bit at a time to the eggs until the proportions feel right. Thanks Chef for your guide into better cooking. (Next time you won't have to call your wife)

1:11 I’m assuming those are room temperature eggs otherwise the temp difference would crack them?

In 1997 I was working at a place called the Old Consulate Inn in Port Townsend, WA. Our supervisor & the owner of the joint was rash & unreasonable in many ways but one summer day she told me & my colleague to boil & peel 6 dozen eggs for egg salad tea sandwiches. We were gobsmacked. However, somehow, I realized that we could boil the eggs, plunge them in a cold bath, crack & roll the shells...and they'd just slip off.
What a relief!! The rest of the salad was a breeze.
p.s. I lost my egg slicer like yours, so I use my potato masher.

This looks really good I never had capers before looks way better than the one I just made I only put pickles mayo and mustard in mine.

Im going to try this. I like egg salad but I havent had it in years because its usually pretty sad looking. But this looks much better. I started steaming my eggs a few months ago and it makes a big difference. Plus you use a lot less water and that little bit of water boils super fast. I just use a bamboo steamer over a pot. Add maybe an inch of water. very simple.
Yes...always boil the water first, then add the eggs.Makes for easier peeling!

you can also just steam steam the eggs for 6mins, same texture if you do a simmer instead of a rolling boil.

Love your recipes and presentation!!! I’m definitely going to try your egg crack and roll technique. I put my peeled eggs in a bowl and use a pastry cutter to chop them up for my egg salad. Works great for me (since I don’t have the slicer I just ‘made do’ with what I already had! Oh, and your soups look absolutely delicious!!! I didn’t see a recipe for your minestrone soup….. ??? I have to use an egg slicer, too. But I only slice once. I use a big fork when mixing which chops down the pieces of egg more, but I like the bigger chunks that remain.
I use broccoli stalk and leek as well. A dash or two of dry mustard to give it some zip.

I love egg salad and like to add a little fresh lemon juice (just a little bit) to brighten the flavor.
Pickle juice works too.

I use a pastry blender to cut up the eggs, it goes so much faster.
Learned the hard boiling trick some years ago. Then, came the ah ha of cutting the eggs for the egg salad. I just put the peeled eggs in a bowl and use poultry scissors to cut them to what ever size I like. No mess. And make the fixings in another bowl, and add a bit at a time to the eggs until the proportions feel right. Thanks Chef for your guide into better cooking. (Next time you won't have to call your wife)
