I grew up eating such delicacies... I don’t suffer any ailments from eating roadside stalls or pushcarts. Using hands to made doughs are normal in every cultures. In Korean it’s called 손맛 “son-mat”, literally means ‘tastes of hands’. What I found were some people found it disgusting seeing such handling methods but when in Paris they went ‘Ooh! Aahs! Chomping away baguettes, croissants, etc. which were made by hands as well and some artisanal boulangeries purposely made bread using sourdough fermented by certain yeasts in a cave!
