  • A bakery that lives in harmony with nature.
    Almost no electricity is used, and the bread dough is hand-kneaded and allowed to ferment naturally.
    And the bread is baked in a homemade wood-fired oven.
    Koki Ota, a baker, travels to France to learn the way of life of a "Paysin Boulanger" (a farmer's bakery).
    He returned to Japan and now runs a one-of-a-kind bakery with his wife in an old folk house deep in the mountains.

    I'm french and a former baker, and this man is working exactly like we did in the old days in France and like I did from 1990 to 2020, except that he's Japanese! Thank you guy for your video, I know very well the patience you have...
    You don't work the dough much and your ingredients are really looking good, which both are the best way to have a good bread.
    I would have loved to taste it!

      Like sebastien already said, all bakers worked like this in the good old days, with love for the product and a lot of time for the yeast too work ...

      As a baker maybe you know what type of bread that is at 36:41 ? It has the deep cracks that formed on their own, I don't think the baker slashed the loaf at all.

      @@heliedecastanet1882 Could very well be. I watched again and it appears the reason that loaf has the unusual look is in the shaping. He puts the dough seam side down in the proofing basket then when he turns it out he doesn't score it. Wish I could taste it!

    As a son of a baker myself, I could not help but admire the way the bread is made in Japan, with a lot of care, love and passion. I am in my mid 60s but I helped my father from the age of 7 and loved every minute of it…….money is not everything……bravo….❤❤❤❤

      I speak French, and as such, I was in Kyoto this past summer, where I ran into a French guy who had been living there for the last 20 years. I got the goods right from the horse's mouth; according to him, in the last 4-5 years, a great many French bakers have moved to Japan, and they have spread their art. In his own words, the bread in Japan, is every bit as good as that in France.

      hello Wizard. my mom n dad owned a bread bakery as well, like you i was involved from an early age. i miss it terribly. the breads and processes executed bt Mr Yasaka in this film are virtually identical to ours. much respect and best wishes to Mr Yasaka and his family

      На каждый товар есть купец , я бы с удовольствием поела такой хлеб и не было бы жалко денег , так как видно какой это труд вам продают не просто хлеб из муки купленной в магазине , не понятно как эта мука еще сделана , а муку делают сами на закваске , вы когда нибудь ели такой хлеб ? За один аромат такого хлеба я готова заплатить эти деньги . Я ела такой хлеб , рядом с нашим домом сеют пшеницу и мама покупает зерно и сама перемалывает в муку . Стоит такой аромат ❤ это и есть жизнь .

    The way this young gentleman makes bread is almost a religious experience. So meditative and absolutely beautiful. He treats every step of the process with respect. There is true love and care in what he does. I’m very sure the bread he makes and bakes taste delicious. Thank you for this video.🙏🙏🙏

      i thought he looked miserable and grumpy. also, all food sellers i know and love, enjoy selling their hard work and seeing the joy on their customers' faces. the fact that he cannot even sell his own bread is a red flag to me. i hope his mental health is good.

      @@hilmir We are a focused, reserved culture, so what you might perceive as grumpy can be an individual raised in a different culture, who doesn't outwardly appear chatty and smiley, as an American or western European might. It"s valued to be productive. It beautiful to witness the Zen unfold in this professiona'ls artistry and ease at each step.

      @@hilmir He and his wife run the bakery. They manage every aspect, as is shown. He and his wife are shown selling the bread at the bakery and elsewhere. He trained in France and looks to me like he is a very contented and focused young man. He and his wife both look happy to me; lovely smiles when they interact with their local customers. How wonderful their success at such a young age. What a beautiful location for this 'farmer's bakery'. Their website is beautiful. Wonderful video! May they enjoy many, many years of continued success.

      Bread of live, not being gross at all, but I always thought the bread of life was made out of ground dried maggots. When there was no grain or food, they used maggots as flour. Love this video, the baker awesome! Just a note about the bread of life title

    I absolutely LOVE that Joel said “we need to not get ahead of them (newbies) and instead hold the their hand” it is extremely isolating, and jarring when you make the change to this lifestyle. When you have fellow homesteaders that aren’t welcoming it causes a lot of self doubt and heartache.

    Very emotional memories for me to watch, in the 1960s England My late farther made breads exactly the same way, all hand made, no machines and a coal oven, fantastic to see, bread looks amayzing, i only wish i could try it. Please keep up this great tradition and skill. ❤❤❤

    Greetings from Taiwan. The skills of this baker are incredible. To do this all by hand with nearly no electricity is amazing. I love how he effortlessly spoke to his neighbor in French. I travel to Japan often and hope to visit this beautiful bakery in the mountains.

    Absolutely one of the best educational bread baking channel’s out there. As a bread baker myself I was so thrilled to see this one man accomplish baking bread without any help.     Der Mann versteht sein Handwerk und ist mit ganzer Seele dabei. So etwas ist selten geworden und darf mit Recht bewundert werden. Vor allem das Ursprüngliche und Natürliche hat dabei einen hohen Wert. Respekt!

      Traditionell gebackenes Brot - lecker!
      Da es beim Deutschen Bäcker hier nur noch Industrie-Brot gibt, backe ich seit Jahren mein Brot selbst, mit natürlichem Sauerteig und langer Teigführung (>24 Stunden). Roggen, Weizen, Dinkel, sowie Saaten nach Belieben.
      Auch dem Nachbarn, der kein Industrie-Brot verträgt, hatte damit keine Probleme. Respekt vor dem japanischen Bäcker. Das ist mächtig viel Arbeit, die er leistet. 💪

    Fantastic! This is how bread has been made for hundreds if not thousands of years. A millstone and a primitive oven with a lot of elbow grease is all it takes.     Thank you for let all us see the way bread was supposed to be made and so healthy and good for us. 💖My mother made the same every week for a big family and workers in a small farm house in Italy.     Какой благородный труд! Сам мукомол, сам дровосек, сам истопник, сам тестомес, сам пекарь, сам уборщик и ещё и продавец периодически. А как отработан весь процесс, ни одного лишнего движения, никакой суеты. Все примитивно, но это и ценно. В этом хлебе душа есть!

    I am fascinated by what I have just seen. I grew up in Europe and was practically raised on rye bread which I still love, in my old age. Now I live North America and when I see this master baker Koki Ota how lovingly he makes and creates his bread, I am filled with feelings like amazement, envy and sadness at the same time. I am amazed by this baker's lovingly made products, envying local people who have access to this baker's products and I am really sad that I am not one of those people.
    Master Koki Ota (and I mean Master), although we never met and most likely never will meet, you have my respect and I wish you many years of success.

      Rye bread is THE best for sandwiches. And gotta have the caraway seeds too. Get yourself a Rueben sandwich on rye with some thousand island dressing and you’re in heaven.

    I'm impressed by how carefully and gently he stacks the empty baskets. He handles all his tools carefully and deliberately. It's probably a direct consequence of loving his craft. It applies to any endeavor in life. Someone who carelessly tosses things around won't achieve much.

    As a German living in America never would I have expected Japanese bread to look so much like German bread! This gave me so many flashbacks of going to our local bakery as a child and getting treats out of the bake shop window behind the wife's back as a teenager when we were still out in town center on a Saturday morning ☺How I wish I could taste one of your breads! Our baker used to make his breads the same way you do, but when he became ill and his daughter took over she modernized and changed recipes to save money and work more efficiently and nothing would taste the same. Your village is blessed to have such a dedicated and hard working young man! But please protect your lungs from inhaling the flour dust, Baker's Lung can be very serious and took out baker at a ver young age 😥

    I've always wanted to work in a small local shop like this so badly. The kind of place where you can be meticulous and do everything how it should be. Where you don't have 20 levels of bosses looking over your shoulder. You can have a close relationship with the owners and work in peace. It would be a dream. Even in woodworking, I see these masters taking their time. Doing it all as it should be done. With care and love for the craft. I like to believe that one day I may be lucky enough to work in a place like that, or possibly own one myself. From joinery to metalwork, videos like this give me hope that maybe I'll find my place. It feels like the work I've done so far in my life is rush rush rush, give us your all and then give us some more, and take this piddly check then don't complain. Feels like I can't even be happy because I dread the coming work day. Surrounded by people who are just as miserable, doing back breaking labor, and no chance of moving up. Either because I wasn't the bosses son, or because I didn't spend 8+ years in college and have 5 years experience right out of the gate. What happened to masters and apprentices.
    Maybe I'm just ruined by media, but it seems like small family businesses, masters and apprentices, and love for your trade are how things SHOULD be. But then you have greedy people intentionally trying to shut out the small guy, all to get more money. We need to bring back small local business and do away with these big corporate slave drivers.

      I fully understand what you're saying and I would follow you if I had to choose a trade today. But your yearning has strong limits in our world : this man didn't go to France on a schooner when he decided to learn his trade there, he had to use huge and highly complexe machinery and organization to fly there.

      I hope and pray that you will find the place of value that I hear blooming within your soul - - - please see the Japanese movie = The Lines That Define Me ... there is a statement that one of the ink painters shares - "not become - change into it!" - he was speaking to a younger student from the local campus, who came to help set up the venue. During their talk, the student stated - he was thinking of studying law to become a lawyer...this is where the artist makes the above statement. But the master artist was watching the young student as he helped set up the venue.... He saw something in him as he was tearing up while observing one of the Ink Paintings on display...He offered the student an apprenticeship opportunity and in time, the student became an Ink Artist ... There are several movies that have valuable messages and foresight, for me, this is definitely one of them!! (- I do not write well when my feelings are so full -so i hope there is clarity in my writing-). Life has shown you valuable lessons that will not work for your heart; as you go forward and lay the steps to your path - they are there - yet, only you see them - the knowledge you gained from others examples, will save you from repeating that path...you can go your own way! Much peace to you - your heart and loved ones! Shalom

    Loved this as I have never seen anything like this baker before. All his own work, natural ingredients, and that oven, it is just perfect. I was pleased to see that the local stores even bought their bread. Also it is a beautiful place that they live.

    Such dedication. He obviously has been doing this since he was a child, and enjoys the quiet and solitude. His bread baking is true art. Where I live, we have a small baker's shop where he does the same type of bread, in a wood fired oven, etc. He's only open one day a week for 4 hours. There is no bread made anywhere that tastes better than bread in a wood fired oven. What a joy to watch this man do his craft. I just wish I could enjoy some!!

      It says in the video description that he traveled to France to learn this skill, then return to Japan to run his own bakery.

      He uses French methods, even materials such as the canvas where he places the loaves and how he weighs them, using fabric covered baskets
      to mold them, etc. It's exactly how we do it in France traditionally.

      No way, Japan is not a country of Bread. Until 20-30 years ago there was no bread of this kind in Japan!! We had till then only white bread made by mostly big factories and there was no bakery at all and we Japanese only seldom ate bread.
      Now it seems to be a fashion to eat bread in Japan!! Eating bread became a fashion promoted by the media and Japanese love fashionable things!!
      I am Japanese living in Gernamy for more than 45 years, but I prefer eating rice.

    All I needed to see is all the muscles in his hands and forearms to realize this man is talented, hardworking, passionate baker who puts his heart and soul into baking. I would pay 5 times more for his bread.

      I know you jest on the amount you'd pay but in USD, I think some of the pricier breads were ~$11 ea. I'd still pay it to try. Not sure about ~$55 though. heh

      Со стороны всегда красиво.Но,на самом деле это адский труд.Больные руки,суставы,легкие,носоглотка забиваются мукой.,парами.Пока молодой ,еще ничего,потом все начинает выходить боком.Если бы он пек ,10буханок,для себя,родни,то куда не шло,а если это как произв и надо мешками месить,то можно угробить себя.Сейчас уже есть все для облегч труда ,зачем заниматься таким тя желым трудом.
