That is literally a staple in my house, the ramen is very popular to eat among the Vietnamese community. Gosh, if that stall was around my house, I’d order it everyday or multiple times per day. Fresh & savory, mouthwatering.
If there is "Shio ramen in Japanese" in local super markets, it could being a optional taste. The taste of the shio ramen is based on salt and fish or chicken flavour. It would be fit to Thai tastes.

It’ll be more sour and spicy than salty
The liquid ratio from blanching/boiling is enough to balance the ramen seasoning. I think that’s a tamarind or diluted fish sauce they add.
My family makes a version that’s basically a quick version of chow mein and the flavors are perfectly balanced unless you go ham with the fish sauce
