You made this way harder. Pop those spuds in the microwave 10min for 2 . 8 min for 1. Also stops you from heating up the kitchen lol I make a taco sweet potato. Black beans, avocado, onion, cilantro, tomatoes peppers of your choice, beef alternative of your choice ( I’ll usually do tofu tossed in better than bouillon and taco seasoning ) top with nutritional yeast or vegan cheese little follow your heart sour cream .

Definitely going to give this one a try. My go to quick meal is a stir fry. I just cube some eggplant and tofu and throw it in the oven, then blanch some broccoli and then put it all together in a pan for 2 minutes with a sauce of soy/sugar/sesame oil/ginger/crispy chilli.

To me, they’re like pumpkin pie, and as we head into the holidays, I’m eager to find whole food vegan alternatives to traditional holiday treats, so I can avoid the holiday weight gain, especially when it comes to avoiding refined ingredients like sugar, flour, salt. If you can invent a wholesome allulose sweetened “eggnog”, this would be so immensely appreciated.

As I also commented on Merle's video, did you know that you can purchase flat parchment paper? I have it for my 1/2-sheet pan, but you can also purchase for 1/4-sheet pans. It comes in a flat package so no need to crumble the parchment paper to get rid of the tendency to curl at the ends. Its only 6:30 AM, and my mouth is watering. Sweet potatoes for the win!

Im super aware and sensitive to smells and air quality issues too. Sweet potatoes + chickpeas is what i use as a base for all the buddha bowls. Its a great combo!

Their is an already seasoned black bean in the canned section at Walmart. I bake a sweet potato and just dump these pre seasoned beans on it and it's just so easy and tastes great with minimal effort when I just don't want to cook.

Dinner doesn’t have to be a big fancy meal, it just needs to taste great, be relatively easy to make - at least during the week, and it should deliver the nutrition that you need. Chickpeas are a big part of my diet, with my go-to meal being chole chaat, which uses a lot of the ingredients shown in this video: chickpeas cooked in black tea and lots of Indian spices, combined with fresh tomatoes, onions, cucumbers, some chilies, fresh herbs, and potatoes (I usually use sweet potato). I usually add tamarind chutney, green chutney, and yogurt. If I have pita chips or peanuts, I may add them for more crunch. It’s really good! Heavy on carbs perhaps, but it’s not a problem for me. You can also turn a can of chickpeas into a really good pizza crust. I’m not kidding, I was skeptical but also curious, so I made a quick margherita pizza with fresh tomatoes, basil, garlic, and fresh mozzarella (I’m not vegan). I thought I would take a slice and probably toss the rest, but it was really freaking tasty. My legume hating child took a slice, ate it while standing in front of it, then took half the pizza after declaring it better than delivery. Go figure.

Pizza Crust: 1 (15 oz) can chickpeas, drained 1 egg ½ cup all purpose flour ½ teaspoon salt, to taste ½ teaspoon onion powder ½ teaspoon garlic powder ½ teaspoon italian herb seasoning ½ teaspoon red pepper flakes, optional ¼ cup grated parmesan cheese Pizza Topping: 3 tablespoons pizza sauce or crushed tomatoes 3 tablespoons shredded mozzarella cheese 4 oz fresh mozzarella cheese, sliced Preheat oven to 200°C (400°F). Cover a baking sheet with parchment paper, then brush 1 teaspoon extra virgin olive oil over it. Drain and rinse the canned chickpeas, then add to a blender or food processor together with the egg, flour, cheese, and seasonings. Process until you get a smooth dough. Transfer chickpea pizza dough over to the sheet of baking paper, then with the help of your oiled hands shape into a thin pizza crust. Try to make it as thin and even as possible. Spread sauce over the crust and sprinkle on shredded mozzarella cheese. Place the chunks of fresh mozzarella evenly over the crust. Add the toppings of choice, but don’t overload it or you’ll get a soggy crust. Bake in hot oven for 15 to 20 minutes, or until cheese has melted and the pizza crust is golden baked on the bottom. Definitely do not take it out too soon, because you want the crust to be crispy and the cheese to be melted and bubbly. Serve very hot.
