as a 68 year old batchelor and a helpless rookie when it came to anything more complex or involved than say boiling water you and your videos are a godsend. Bless you sir for being able to teach (what I thought I was) the unteachable.

You can cut the sugar but the vinegar will be more pronounced. It depends if you like it more sweet or more sour. If you want neither, add more water to the sauce.

Agreed it's a little sweet and I didn't add enough vinegar (more like a Cantonese sweet and sour), but that's my own personal preference. Great recipe, batter was perfect. Hardly any difference, if any, between this and restaurant. Thanks for the recipe and upload, really enjoyed it.

If you keep the S&S sauce and chicken separate and then pour the S&S sauce over the deep fried battered chicken pieces (at the very end) the chicken will stay crispy longer and won't absorb the S&S sauce like a sponge. I like my chicken pieces crispy when I eat my S&S chicken but that's just more personal preference I guess.
Great video and step by step walk through on how to make S&S chicken!

Essie Shyflamez Lol. Good ol' maggi seasoning. You used the all purpose, the chicken one or both? Also, now that its been approved by a Jamaican palate, i'm definitely gonna try it.

Very good, with your own preferences on little things like choice of vegetables and how small you want them. The important stuff is the batter and sauce which are right on. People might be shocked at the amount of sugar but it's spot on.

I've survived almost 4 decades on this earth without tucking my fingers when I cut, 1 of those working in full service restaurants. Not cutting yourself has more with paying attention than it does finger position. And that knife didn't even cost me $10 brand new so who cares what I cut on.

I marinated the chicken in rice vinegar and soy sauce for about 15 mins before coating them with the batter, as I marinated the chicken in soy sauce, I didn't add soy sauce to the batter mixture. Once the dish was ready and the stove was off, I tossed in some unsalted raw cashew nuts and sprinkled it with toasted sesame seeds - this is optional, it would still taste great without these. And I used rice vinegar instead of white vinegar, just because I had some lying around. Will be making this again, when I fancy something Chinese. Big thumbs up to this recipe.

  • @croutoncrackerjacks

I make my own (video and recipe on my channel in another video). Lately though, I've stopped using ketchup in the sweet and sour sauce and like it better that way.

Just made this. AH-MAZING!! The directions were perfect, Ingredients are easy, Directions are clear. I make a lot of Asian dishes and this is so simple. Thank you SO much for posting. I rarely subscribe to TH-cam Peeps, but consider myself a fan of yours! (P.S. - I added some Red Bell Peppers to the veggies and a teaspoon of Red Pepper Flakes to the Sauce to give it a bit of 'kick.') Perfect!! Awesome!! Will be making this every night :) p.s.s. I like the red food coloring - makes it look more delicious and 'cultural.'

I make the sauce up all the time on it's own to use on my homemade fried rice and crab rangoon. Just mix it together in a measuring cup with the cornstarch and put it in the microwave until it's thickened. I wouldn't use that to cook with though since the cornstarch will break down and not keep the sauce thick after reheating. You can make it up ahead though without cooking and add it when you do make dinner.

  • @smartd111
    @smartd111 9 ปีที่แล้ว

This is my official sweet and sour recipe. I normally do it without red coloring, but with brown sugar, I would caution anyone using brown sugar to use less than the amount if using white sugar, brown sugar is much sweeter.
Love the recipe many thanks for sharing.

Dear Sir: I just finished cooking this Sweet and Sour Chicken as per your recipe. It came out wonderful. Instead of using my gas stove, I use my induction Nuwave cooktop because it has precise temperature control for frying. The chicken came out great. You have a great recipe for the batter!!!. After adding the sauce to the vegetables, it was a little think and I added may be one quarter of a cup of water. Then I added the chicken. I also added some salt to the sauce. But this came out great. I can wait to have dinner on top of white rice. Thank You so very much for sharing this recipe with all of us.

Of all the recipes I've tried that use it, none of them are like the sauce you get in the restaurants near me. When I asked both of my favorite Chinese restaurants if they used pineapple juice in their S&S sauce, neither of them did. You can add it if you want but I find it to make it more like a tv dinner than something in a restaurant.

I've been eating this dish, in one form or another, for about 35 years. The best I've ever had was at a little place in San Francisco's Chinatown. That being said, I made this (sauce) today for some left over s&s chicken from last night's dinner. To MY taste it's to sweet. But the basic sauce is tasty. Next time I'll only use 3/4 C of sugar, and that should do. Well done not only on the recipe but also on the video!

For someone isn't Chinese you got this quite close to the original sweet n sour recipe, well done!! originally they would add pineapple for the fruity sweetness so they don't need to put too much sugar, also they added bit of honey too and they would put little more ketchup to have that natural redness instead of using food colouring.
Also they would add about one egg white to thicken the batter so the chicken would come out a bit puffy~ But I suppose you right, becuz many restaurants do use food colouring to cut down the cost!
