I like inverting my chiffon cakes while they're still hot. Helps keep the height and preventing collapse :) They also won't fall prematurely because it's sticking on the sides. But just in case they do, wire rack underneath would save it.

I've watched both this video and Nino's, and I honestly have no idea how he managed to keep his chiffon from deflating like yours did. However, I do know that chiffon is usually cooled in the pan upside down, so that might help you if you try this again sometime. The cracking you experienced was likely because you had overwhipped the egg whites somewhat. When making a chiffon, you have to go to medium peaks, which feels somewhat "runny" if you're used to making a meringue. If you go all the way to stiff peaks, the proteins in the egg whites are bound too tightly with air bubbles, and that prevents the cake from rising as much as it should.
I attended a live opera about Julia Child called Bon Appétit!. The actress had her mannerisms and voice *spot on*... and she made a cake. On stage. While singing. She hand-whipped egg whites into stiff peaks *while singing opera*. Singing is a workout normally, and the effort of whipping by hand is not to be underestimated, and singing *opera* while hand-whipping is HARDCORE! When she lifted the bowl over her head to demonstrate the egg whites were properly whipped, everyone gasped and cheered.

Hi Emmy! The reason the cake collapse or sank because it’s unmolded hot. Angel food cake or chiffon cake or any cake that is of similar nature should be cooled completely in the baking tin before unmolding. The cake should be inverted as soon as its been taken out of the oven. This is also another reason why this type of cake doesnt require a greased or lined cake tin as the idea is to not want the cake to slide out during the cooling process. Basically you want thr cake structure to set during the cooling process, because it’s stuck to the tin on the sides and bottom, inverting it allows it to hold onto the cake tin. This way it minimizes or prevents the cake from collapsing on itself. ( this is also why usually chiffon cake pans have those additional pins or legs at the top of the pan, it helps hold the cake tin higher up when inverted)

There is a old recipe that my dad used to make called potato candy actually made with a baked potato! My dad grew up poor and his mother used to make it for him as a child. I would be fun to see you make it 😍 .The candy is made using a bake potato, powdered sugar, peanut butter and cinnamon all rolled up in a jelly type roll. I enjoy watching your videos. I think you are fabulous and funny!

Your fruit flies can form huge colonies deep inside your sink drains making it almost impossible to get rid of the problem. Here is what I do, and it also works as a preventative measure: Pour about 1/2 cup of baking soda in every drain in the house (kitchen & bathrooms), then pour white vinegar down the drain. Watch it bubble up and repeat until all the baking soda is gone. Then after about 20 minutes I pour boiling water down the drains to rinse them thoroughly. This will eat away at any food residue inside the pipes that might be attracting the flies, and also flush the flies away. I do this about once a month and haven't had a single fruit fly in years.

You always talk about how you like the combination of sweet and salty together. It’s one of my favorite dishes I actually make it my own by adding some ginger to it I like to also add honey and peanut butter and the abuelita chocolate.
If you're ever worried about a sponge or chiffon cake sticking to the pan, just line the pan with parchment. Works for me every time. Also, letting the cake cool upside down helps to keep it from collapsing in the middle :]

The reason why your cake sunk is because when you put it on the cooling rack you flipped it upside down, which caused gravity to do what it does best. You also got that crack on the bottom (technically the top) because it was really hot & it settled that way causing it to crack. You should have let it cool on the rack with the cake still in the pan to give it some elevation so the cake can cool evenly. Just a tip, that’s how I was taught in my cake class & I’ve always had perfectly shaped cakes. ✅

Hey Emmy! I've made this two times now following Nino's recipe and I would highly recommend using 30% whipping cream instead of heavy whipping cream, which gives you that runny lava cream you're looking for! (if you decide to make this again)
I like using small carnivorous plants to trap flies. Sundews work, as do Venus fly traps. Most places in North America have some sort of indigenous carnivorous plants.
