Lemon Meringue Cupcakes

Here is what you'll need!
LEMON MERINGUE CUPCAKES
Servings: 12
INGREDIENTS
Cupcakes
1 cup butter, at room temperature
1½ cups sugar
4 eggs
2½ cups flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla extract
½ cup milk
½ cup lemon juice
Lemon Curd
6 egg yolks
1 cup sugar
½ cup lemon juice
1 tablespoon lemon zest
6 tablespoons butter
Meringue Frosting
6 egg whites
1 cup sugar
1 teaspoon cream of tartar
PREPARATION
1. Preheat the oven to 325ºF (170ºC).
2. In a medium bowl, cream the butter and slowly add the sugar. 3. Beat until light and fluffy.
4. Add the eggs one at a time, mixing until incorporated.
5. Sift the flour and baking powder into the sugar mixture. Add salt and mix until just combined.
6. Add the vanilla, milk, and lemon juice, and mix until incorporated.
7. Scoop about ½ cup of the mixture into a lined cupcake tin.
8. Bake 12-15 minutes, or until a toothpick comes out cleanly from the center of the cupcakes. Let cupcakes cool.
9. Prepare the lemon curd by whisking the yolks and sugar in a heatproof bowl over a pot of simmering water.
10. Once the sugar is dissolved, add the lemon juice and zest and stir until the mixture thickens, about 10 minutes.
11. Once the curd coats the back of a spoon, add the butter and stir until melted.
12. Remove from the heat, cover with plastic wrap, and refrigerate. Make sure the cling film touches the surface of the curd so that a film doesn’t form on top.
13. Prepare the frosting by whisking the egg whites and sugar in a heatproof bowl over simmering water until it thickens and the sugar dissolves completely. Tempering the eggs will ensure the frosting is food safe without being baked.
14. Remove from the heat, add the cream of tartar, and beat about 10 minutes until soft peaks form.
15. Using a piping tip or a knife, cut a hole into the top of the cupcakes and press down to make a well for the curd.
16. Add lemon curd into the cupcakes and frost them with the meringue.
17. Torch the frosting or carefully broil for about 3 to 4 minutes. Be sure that you use foil cupcake liners if broiling!
18. Enjoy!

I have been doing this recipe for a while now and it is probably my favourite from tasty, but there are a few things that are not mentioned in this video. The way i do them is amazing so feel free to follow my advice:
- for once, i cut down the sugar to almost half for all: the batter,the lemon curd and the meringue. Don't worry it will not ruin the recipe, i just know a ton of people, including myself,who do not like unnecessary sugar in desserts, also,it does not affect the texture
-i don't know if this recipe demands fresh lemon juice (like from real lemons), but for me it works AMAZINGLY with store bought lemon juice. I use an italian brand that's made out of 1% lemon juice amd 9% water and i believe it is the right thing to use.
-about the lemon curd, what i prefer to add to the ingredients is half a teaspoon of corn starch disolved in a tablespoon of water and added into the curd before you refrigerate it. I also let it steam for about 15 minutes to make sure it will thicken as it should.
That's about it, hope this was useful and i recommend you try this recipe since it tastes like absolute lemonly heaven :)
An easier way to fill the cupcake with lemon curd would be to fill a piping bag with it, then stick the metal tip through the top of the cupcake. As long as you don't stick the tip too far down and don't squeeze the piping bag too hard, your result is faster, easier, and cleaner. This is a trick I learned working in a bakery.

Just a question, why would you need foil cupcake liners to broil the meringue? Could I use paper cupcake liners instead, or is it to prevent them from catching fire?

Wait a minute, aren't the eggs in the cream and the filling raw? Or can you eat them that way?
Jenna Lynn They're heated over boiling water to pasteurize them to make them safe to eat. After cooking them to a certain temperature you can eat them "raw" ( I guess they're still raw just hot ).
Also, the egg whites were beaten into a meringue which means that air was incorporated into them. This makes the egg whites thick and fluffy, which is the "cream" you saw there. The creme of tartar in the recipe is used as a binder to make sure the mixture doesn't collapse or fall apart. No heavy cream required, but you could make a whipped cream with lemon zest as an icing to avoid eating raw eggs by accident.
You could also buy lemon curd in stores so you don't have to risk getting food poisoning by trying to make your own as shown in the video for the filling.
