Are you talking about i-frames? Every time you dodge or roll, you're invincible for a small amount of time. If you time it perfectly, you can avoid all damage from an attack. This is definitely a big part in all of Souls games
it's less about visually getting hit and more about using dodges with built in windows of invincibility to ignore windows where an attack should hit you. it doesnt look amazing in most games but it's the only way fighting giant god beings, dragons, horrible creatures the size of buildings with a normal human sized character is really going to work out gameplay wise.

Dark Souls had way better and far more interesting bossfights, and even tho the gameplay was clunky asf, Lies of P managed to create something worse with way better tech than what they had to create ds1
Out of all the games you pick dark souls 1. The game that has the most simplest boss designs. Half the bosses in dark souls 1 have like a max of 3-5 attacks. Normal elite enemies in lies of p have more complex attacks than dark souls 1.
