Yes! I’m not Indian but Chana dal dishes are very similar to my favorite “yellow lentil” dish in Ethiopian cuisine. I got so excited to find this analog in South Asian cuisine (which is even more available to me in the UK). You’re one of my food heroes - I hope I get to meet you one day!

It looks absolutely amazing. I do have a question. Do you freeze your tofu before you cook it? I’ve been following another thread on Facebook, and people seem to like tofu more once they freeze it changes the texture.

hey Derek, I tried making this and it had quite a pungent flavour (not entirely pleasant), could it be from the white peppercorns? I've never used them before and was surprised by what a strong smell they have in the box. Thanks!
Can I leave out the Thai chillies or just use half of one. If I use a whole thai chilli, what could I do or add to make it have less heat. Or do I just learn to like the heat. Also are you using just the very centre of the lemon grass?

Dogs don't... Unlike cats , dogs are omnivores ( not obligate carnivore).. Dogs can infact thrive on a plant based diet if done right.. Hope his buying him good quality dog food that has all the extra nutritients like b12

I never thought about chopping the bok choy that way. I will do that for other vegetables with a similar profile.
