I feel the customer that is going to purchase your delightful cookbook would be savvy enough to want (or already have) a scale for accuracy. Scales are so inexpensive and so easy to use. Ironically, the battery in my kitchen scale died this morning and I need to replace it! One of my clients is a three Michelin star chef, and he explained how crucial weighing your ingredients is when baking. 125g of flour, depending on the humidity, can vary from under or over a cup.
I would be one of those Americans who is confounded by grams of food in cooking 😫! At my age, I'd like to believe an old dog like me can still learn new tricks, however, I just have no visual reference for what 12g, 50g, or 100g looks like. I am not much of a measurer in my cooking to begin with, but if someone says there are 2 cups of flour, I can eyeball it. However, I have no clue what this looks like in grams. That would take some time to master, and since we still do everything by the English system here in cooking, it's hard to get away from. This is why I also REALLY appreciate when Cecilia gives conversions from Celsius to Fahrenheit when she talks about the weather in Svalbard. I don't have a reference what the temp is in Celsius, as many times as I have looked up a conversion.

Even as an Australian I prefer cup measuring because I’m lazy 😆 but grams are so much more precise for baking and if I use cups instead of the scales I usually mess up things like bread making

We get along great, but I do look forward to his road trips away. Something about doing what you like when you like and not having to be concerned with anyone else. It’s just over 95% of the world uses the metric system. The United States is a very rare exception. your higher education your universities, your hospitals. There are all metric. For some reason, they haven’t adopted it for the average person. In Canada, it was legislated across-the-board whether it’s grocery stores, etc.. starting in 19 70 and by 1985. It was 100% compulsory

Another American here. . . My daughter and I are SO excited that you're writing another cookbook! It is great to leave the recipes in grams, etc. so that we can recreate them just right! Grams vs. cups always make the recipes more consistent. When ingredients are being weighed, the recipe will always be the same. You can have a 'dense' cup, or a light cup. . . it always varies just a little. Another fun fact. . even though our recipes are often measured in cups, etc. in cookbooks. . . large operations like our professional local bakeries all use grams and liters, etc. so that their products are consistent each day. (We also love the metric system practice)! We look forward to buying the new cookbook when it becomes available and can't wait for our copy of Life on Svalbard to arrive!
Scottish person here. First of I adore your channel and as someone has already said, you deserve all the recognition you can get. It is so evident how hard you work to give us a look into a world some of us can only dream of. Re the measurements, I follow many bakers and chefs from around the world and I’m so used to converting. I wouldn’t even consider it a problem when compiling your cookbook. I have an old scale that does both grams and ounces but if in doubt I just ask Alexa or good old Google ❤️

Americans are using scales. I bought one for several reasons. One being with sm, many delicious recipes are in grams. I love my scale and look forward to this years cookbook.
My daughter living in Europe for the past 12 years has shown me how absolutely EASY it is to follow European recipes using grams, liters, etc. VERY easy when you buy a scale and measuring cups that have those measurements as well.

I went to Germany as a teenager and we stayed in the alps. They hung the comforters out in the fresh mountain air. I have never had such a great nights sleep. I still remember the smell and the feel of those linens and it was 40 years ago. I live in Los Angeles now and if left my comforter out it would not be fresh.
American here! We cook and bake at work and for the sake of adjusting quantities quickly, we use grams and kitchen scales. Scales are CHEAP! I learned to do this at my last job with a Michelin-star chef who only used grams on his recipes as well.
As a american I actually love using the scale and recipes that have gm over cups and spoons etc. so stick to doing the recipes super well and only how your used to we can do it that way or learn if they don't already know

I personally appreciate recipes that are in grams because I know they are more precise and accurate. If they don’t have one, they’re available on Amazon for less than $10 P.s. I purchased your baking recipe book last year and really loved the caramel yum yums! Can’t wait for this new set of recipes!

I am from Canada . Love you guys! Stick with the metrics. I think most people are smart enough to grasp it. Years ago Canada was also doing what the US does, but we have been metric for a very long time, so stick with that it will be fine.

We use kg and tablespoons in the UK but most people have cup measuring spoons also if their keen bakers so I wouldn't worry! We'll all buy! 😊 lovely cosy vlog! Thank you! ❤

I’m an American and have been using a kitchen scale for several years now. My baking turns out so much better with using grams. I would rather have a recipe that uses grams than cups. I will definitely be ordering the holiday cookbook when it comes out.
Cecilia, as a film student, I have to tell you how beautiful the ariel transition you make @7:25 is. Your videos radiate the theme, and this is comfy cozy to the max. The overhead shots of the whales are nat geo quality. You are doing spectacularly well at your job. ❤
I also loved how she filmed herself by her computer as the sun set in time lapse and windows got dark. Somehow although the windows got dark fast, she herself didn't look "sped up". I had to watch that part a couple of times, trying to figure out how she did it. I know nothing about filming,but I can see our Cecilia has some serious skills!!❤
I don't know what's better, watching Cecelia unpack the beauty of Svalbard or Grim and his antics. The concentration when chewing that treat, his boisterous happiness at being outside, or getting ready for a walk with one of his favourite humans - he is delightful. Loved the footage of the Beluga whales. I'd say they are the prettiest species with their vibrant White colouring - outstanding footage. In America. We bake and we love using grams as a measurement. It really is more accurate. Having a kitchen scale is much more common now than it used to be. Just do your measurements in grams, you'll be fine!

I'm an ex-American, now a UK citizen living in Scotland. I have never quite got used to weighing ingredients ...mainly because the scales aren't always as accurate as I'd like them to be. I grew up using cups and measuring spoons for most ingredients, and the recipes turn out fine. A cup is a cup ...and you can see whether it's full or not! :) What I might suggest for your cookbook is for you to attempt to make the recipes using cup measurements as well as the weighed ingredients ...in other words, make two batches ...and see how the recipes turn out? Of course be sure whether you're using American cups or British cups ...they are not quite the same size, I discovered! That way you'll know if the cup things can work. You might have to adjust the ingredients a bit, but you'll know for sure if they work. Better maybe than trying to do a straight conversion? Just a thought....
My daughter and I have been watching many of your videos over the past couple of weeks as we enter autumn, OUR favorite season in New York. We traveled to Iceland and Norway this summer and now we want to visit Svalbard! And as an American, I think grams are fine! (Also, today we were joking that we think you decorated the interior of your cabin to look like Grim--soft and fluffy whites and beiges!)

We need someone to explain why a system that provides more accuracy is better for baking which requires more accuracy, in general, than cooking? Is this a product of not teaching critical thinking anymore? Really?
A gramme is a measure that has been calibrated to a precise, very small amount. Therefore it is much more accurate than ' a tea cup' or a 'spoon' which can both be variable in size. Outside the US, dry goods are measured on scales and fluid is measured in millilitres in a jug, or similar. What does a 'stick' of butter even mean? 200g, 450g, a kilogram? The whole system is so much more accurate!
I'm all about the look of the dough or the feel of it. Measurements are suggestions - even when it comes to baking. Knowing how the ingredients work together is how you know what to "toss in" and what to put "a pinch of" in. I live at high altitude so I always have to change the ratios. I think that's why I love baking - many times it's an experiment and it's cool to see what works and what doesn't. I learn a lot from my mistakes, lol. Happy baking!
SECONDED!! Also, grams converting to Ounces on a kitchen scale is VERY easy in the States. The lack of extreme precision effect fades to nearly nothing when you take into account the variety of hights above sea level for various US cities, small differences in oven accuracy, ambient humidity, and things like that. @@pinkjeepin7777especially in baking, measurements are not a suggestion. They have to be followed. Even the best baker bakes using the exact measurements. Your cake dough won’t “feel” any different if you don’t add baking soda, but it sure will be flat as a pancake when it’s done.

I know others have said this, but a serious American baker has a scale. I sometimes look up British recipes online and find them very easy to follow due to the weight measurements. I also like the idea someone else posted of gifting a scale with the recipes. I can’t wait to try some of your holiday treats!

I'm in the U.S. but I'm a Brit by birth. I'm used to the grams measurements. So I bought a scale that allows the user to designate what type of units they want to use. Now I can use a Brit recipe or an American recipe. Folks, it's not that expensive to get the scale and it's a lot less headache with the conversion. AND yes, I want the cooking guide.
@birdlovespaint they mean weighing scales... either old school with little brass weights that balance, mechanical ones with a pressure plate, or newer digital ones.

Here in the UK we have been using grams and Celsius for decades. Have no idea about cups, lbs and Fahrenheit!!!!

Another American here. . . My daughter and I are SO excited that you're writing another cookbook! It is great to leave the recipes in grams, etc. so that we can recreate them just right! Grams vs. cups always make the recipes more consistent. When ingredients are being weighed, the recipe will always be the same. You can have a 'dense' cup, or a light cup. . . it always varies just a little. Another fun fact. . even though our recipes are often measured in cups, etc. in cookbooks. . . large operations like our professional local bakeries all use grams and liters, etc. so that their products are consistent each day. (We also love the metric system practice)! We look forward to buying the new cookbook when it becomes available and can't wait for our copy of Life on Svalbard to arrive!

Scottish person here. First of I adore your channel and as someone has already said, you deserve all the recognition you can get. It is so evident how hard you work to give us a look into a world some of us can only dream of. Re the measurements, I follow many bakers and chefs from around the world and I’m so used to converting. I wouldn’t even consider it a problem when compiling your cookbook. I have an old scale that does both grams and ounces but if in doubt I just ask Alexa or good old Google ❤️
American here....I started a Sourdough journey over a year ago, and I have done it mostly via grams. I now enjoy using the scale and I would enjoy your book with those measurements. I very much enjoy watching your life and your voice is so calming. Thank you for sharing your life in Svalbard.

American here! I have been using a kitchen scale for many years for baking purposes. It also comes in handy when I find a recipe from a different country. Americans who enjoy baking, probably own a kitchen scale.

Americans are using scales. I bought one for several reasons. One being with sm, many delicious recipes are in grams. I love my scale and look forward to this years cookbook.
My daughter living in Europe for the past 12 years has shown me how absolutely EASY it is to follow European recipes using grams, liters, etc. VERY easy when you buy a scale and measuring cups that have those measurements as well.

I went to Germany as a teenager and we stayed in the alps. They hung the comforters out in the fresh mountain air. I have never had such a great nights sleep. I still remember the smell and the feel of those linens and it was 40 years ago. I live in Los Angeles now and if left my comforter out it would not be fresh.

American here! We cook and bake at work and for the sake of adjusting quantities quickly, we use grams and kitchen scales. Scales are CHEAP! I learned to do this at my last job with a Michelin-star chef who only used grams on his recipes as well.
As a american I actually love using the scale and recipes that have gm over cups and spoons etc. so stick to doing the recipes super well and only how your used to we can do it that way or learn if they don't already know

American here! I agree with what others have said- I feel like the people that are purchasing your book are probably going to have a scale or will be more than willing to get one. I personally appreciate recipes that are in grams because I know they are more precise and accurate. If they don’t have one, they’re available on Amazon for less than $10
P.s. I purchased your baking recipe book last year and really loved the caramel yum yums! Can’t wait for this new set of recipes!

I am from Canada . Love you guys! Stick with the metrics. I think most people are smart enough to grasp it. Years ago Canada was also doing what the US does, but we have been metric for a very long time, so stick with that it will be fine.

American here! I say keep it how you make it so it doesn’t compromise taste or texture. We can easily convert and/or use a scale.
We use kg and tablespoons in the UK but most people have cup measuring spoons also if their keen bakers so I wouldn't worry! We'll all buy! 😊 lovely cosy vlog! Thank you! ❤

I’m an American and have been using a kitchen scale for several years now. My baking turns out so much better with using grams. I would rather have a recipe that uses grams than cups. I will definitely be ordering the holiday cookbook when it comes out.

Cecilia, as a film student, I have to tell you how beautiful the ariel transition you make @7:25 is. Your videos radiate the theme, and this is comfy cozy to the max. The overhead shots of the whales are nat geo quality. You are doing spectacularly well at your job. ❤
I also loved how she filmed herself by her computer as the sun set in time lapse and windows got dark. Somehow although the windows got dark fast, she herself didn't look "sped up". I had to watch that part a couple of times, trying to figure out how she did it. I know nothing about filming,but I can see our Cecilia has some serious skills!!❤

In America. We bake and we love using grams as a measurement. It really is more accurate. Having a kitchen scale is much more common now than it used to be. Just do your measurements in grams, you'll be fine!
A digital kitchen scale was a game changer for me! Weight measuring is sooo much better for baking.
I have seen several American TH-camrs use a kitchen scale when making recipes, so I think having a kitchen scale is becoming more & more the 'normal'. Can't wait for your new cookbooks!

I'm an ex-American, now a UK citizen living in Scotland. I have never quite got used to weighing ingredients ...mainly because the scales aren't always as accurate as I'd like them to be. I grew up using cups and measuring spoons for most ingredients, and the recipes turn out fine. A cup is a cup ...and you can see whether it's full or not! :)
What I might suggest for your cookbook is for you to attempt to make the recipes using cup measurements as well as the weighed ingredients ...in other words, make two batches ...and see how the recipes turn out? Of course be sure whether you're using American cups or British cups ...they are not quite the same size, I discovered! That way you'll know if the cup things can work. You might have to adjust the ingredients a bit, but you'll know for sure if they work. Better maybe than trying to do a straight conversion? Just a thought....
My daughter and I have been watching many of your videos over the past couple of weeks as we enter autumn, OUR favorite season in New York. We traveled to Iceland and Norway this summer and now we want to visit Svalbard! And as an American, I think grams are fine! (Also, today we were joking that we think you decorated the interior of your cabin to look like Grim--soft and fluffy whites and beiges!)

I’m in the US and I have a kitchen scale. The more I’ve gotten into baking, the more practical it is to use one. So many recipes use grams now and I love the idea of using one bowl.
Canadian viewer here - grams is totally fine for the cookbook. It’s so easy to use a kitchen scale so don’t worry about the conversions. Can’t wait for the new cookbook!
22:22 I think you’d be doing new bakers a great service by having Christopher explain in more detail why grams are the preferred measurement for bakers around the world- including the U.S. Once people understand why the precision offered by grams is so crucial for a great bake, I’d imagine they wouldn’t WANT any other measurement!
We need someone to explain why a system that provides more accuracy is better for baking which requires more accuracy, in general, than cooking? Is this a product of not teaching critical thinking anymore? Really?
A gramme is a measure that has been calibrated to a precise, very small amount. Therefore it is much more accurate than ' a tea cup' or a 'spoon' which can both be variable in size. Outside the US, dry goods are measured on scales and fluid is measured in millilitres in a jug, or similar. What does a 'stick' of butter even mean? 200g, 450g, a kilogram? The whole system is so much more accurate!
I'm all about the look of the dough or the feel of it. Measurements are suggestions - even when it comes to baking. Knowing how the ingredients work together is how you know what to "toss in" and what to put "a pinch of" in. I live at high altitude so I always have to change the ratios. I think that's why I love baking - many times it's an experiment and it's cool to see what works and what doesn't. I learn a lot from my mistakes, lol. Happy baking!
SECONDED!! Also, grams converting to Ounces on a kitchen scale is VERY easy in the States. The lack of extreme precision effect fades to nearly nothing when you take into account the variety of hights above sea level for various US cities, small differences in oven accuracy, ambient humidity, and things like that. @@pinkjeepin7777especially in baking, measurements are not a suggestion. They have to be followed. Even the best baker bakes using the exact measurements. Your cake dough won’t “feel” any different if you don’t add baking soda, but it sure will be flat as a pancake when it’s done.
Grams is just fine. Everyone who bakes already has a scale, and if they don't, they need one. They're not expensive.

I know others have said this, but a serious American baker has a scale. I sometimes look up British recipes online and find them very easy to follow due to the weight measurements. I also like the idea someone else posted of gifting a scale with the recipes. I can’t wait to try some of your holiday treats!

Most experienced home bakers use a scale for baking already, and most of us are used to switching between metric and imperial units. Keep it in grams!

I'm in the U.S. but I'm a Brit by birth. I'm used to the grams measurements. So I bought a scale that allows the user to designate what type of units they want to use. Now I can use a Brit recipe or an American recipe. Folks, it's not that expensive to get the scale and it's a lot less headache with the conversion. AND yes, I want the cooking guide.
But exactly how do you use a scale for baking? I am not getting it . Baked for 40 years, where does the scale part happen?

American here. My husband does all of the cooking and baking, and he only uses grams on our kitchen scale. It’s just so precise that he doesn’t want to use any other measurements.
