Video is about making lasagna. I made this dish in sequence over a 2 day period.
Don’t let the pic scare you. Everything in this dish is tender, delicious.
Bake uncovered 340 20 mins
Lower to 300 cover bake 25 mins
drained ricotta. Fridge. 1 day.
Sauce. Prepared veggies, sautéed, seared paste, combined.
Meat sauce. Seared beef/hamburger. Added some sauce. Fridge
Made Filling. Fridge
Pre-made meatballs. Thawed
Remembering coming home from church with tomato sauce wafting through, changing clothing, going to kitchen to make homemade/scratch ravioli… a make in one day affair. memories….
Filling
Ricotta. 16 ozs. Preferably use 32 ozs
Egg 1. Preferably 2 + depends on quantity of ricotta
Salt, pepper. To taste
Herbs. 1 teaspoon Basil, ground oregano, garlic powder. To taste. Your choice herbs
Scratch meatballs.
Small
Beef/hamburger only
Salt, pepper. To taste
Herbs. 1/2 teaspoon garlic powder, basil, oregano
Egg. 1
Parmesan. About 1/3 cup. Test consistency
Sauce
Purée. 32 ozs
Paste. 1/2 4 ozs
Carrot 1. Chop small
Celery. 1 Chop small
Onion. Sweet Chop small
Salt, pepper
Herbs. 1/2 teaspoon garlic powder, oregano, basil
Granulated. Sugar. 1/3 cup. Optional. Your choice. (Usually don’t add. )
Meat sauce
Beef/hamburger. 80%. I didn’t make a lot. About 2.5 ozs. Seared
