    Thank you, I bought my son a Victorinox Grand Maitre chef knife. I have a nice set of dmt solid stones and a strop with 1u diamond past. This will help me a lot. It was an expensive knife and I don’t want to mess it up.

    I've got the Tormek T1 it's a great bit of kit. Han Ed are will last a life time in domestic use. Achieve excellent results with minimal skill and effort. Buy once, buy right.

    I've the DMT and love it because I sharpen all types of knives, and it's more of a compact system than the others shown. And yes, I've the Victorinox knife and several other of their brand.

    Thanks for the video.The Victorinox fibrox knives have been fantastic knives. I sharpen with a chefs choice auto sharpener. It does a very good job. I’d love to use the whet stones I have but I don’t trust myself on the angles.

    Well done. Gives me the confidence to at least think I can master sharpening knives. Hard to find a knife sharpening guy anymore. I’ve got chisels down. I think I need all three. Why? Just how I am… and all three of you make compelling pitches. Three way tie!

    Love all the videos lately. This one was great. It would be awesome if y’all used the edge-on-up tester after finished and see who had the sharpest edge!

    I touch mine up with a a Spyderco sharpmaker. Brown rods or cbn rods if i need a more aggressive grit (basically diamonds). When the wife dulls her fibrox chefs knife beyond that level then i use a guided clamp system which ill be doing this week. Nothing crazy just a Lansky system and will probably use the fine diamond stone to reset the edge angles (since the edge is in pretty bad shape) and follow up with ceramic stones. Think ill go 20dps this time and see how that performs. May drop it to 17 dps next time but see what happens. The nice thing about the victorinox chefs knife is it is easy to sharpen.

      I found a nice edged silicone mat made for putting underneath the dog's bowls on Amazon.
      Comes in a few sizes and colors & the price is right!

    that knife needs the shoulders of the bevel reduced more than everything, its kinda thick. when you cut carrot you will hear a pop.
