    buttercream all the way. I make my sugar cookies and frost them liberally with buttercream and then I put them on a sheet and put them right in the freezer to firm up. Then I stack them in a container and keep them in the freezer. When I want to I can take some out and put them on a plate and they come nicely to room temp

    If you make your buttercream with butter straight from the fridge, your buttercream will get a hardened layer on the outside. If you let them sit to dry (I like to let them dry overnight), then you can stack them without ruining them.

    Both are delicious, but royal icing is my favorite! I love creating beautiful, fun designs thanks to everything I’ve learned in your classes!

    There are a lot of buttercream icing recipes now that are dry firm and crust nicely.

    it would be interesting to know more about the detail ability of buttercream. Decorating cookies with Royal Icing can be used to produce amazing details. Can you do detail work with buttercream?

    My buttercream does get dry sets up very nice

    Will Swiss meringue buttercream form a crust for cookie decorating like American buttercream does? I'm looking for something less sweet but will still crust.

    so how well does both hold up outside? i’m a vendor and me and my printer own a bakery so we do lots of events and most are always outside . our events last 4-6 hours on end . will they melt?

      Buttercream can get very soft and “melt” in the heat. Royal Icing stands up very well to outside temperatures.

    If you add shortening to your buttercream recipe it will harden

      @@judichristopher4604there are a number of TH-cam videos sharing crusting buttercream recipes. You can also use Rolled Buttercream to coat your cookies
