Notes from video Royal Icing Into mixer with beating paddle attachment: ¾ cup Warm/Hot water (hot helps break down meringue powder) ⅓ cup + 1 tablespoon meringue powder (miracle meringue powder; add a little more if using a different brand) 2 tablespoons clear vanilla Start mixing on low, go until it gets pretty foamy. Scrape sides & re-mix. 2 lbs powdered sugar (add it all at once - but no lumps) Start mixing on low, pat sides to help shake it down. As soon as it starts to come together, stop mixer. Add 1-2 tablespoons of corn syrup (helps keep it flow and keep icing soft) Turn the mixer back on, slowly move to high. Mix to stiff peaks. It will really start to fill the bowl, like ¾ of the bowl will be filled and looking fluffy. You don't want to overmix; if you do you cannot move it around in the bowl, it will make the icing dry and crumbly.

It would be much more helpful if you showed us inside your mixing bowl between additions and so we know what it looks like especially the first part. I thought you weren’t supposed to incorporate a lot of air into Royal icing or it will dry to a crumbled consistency? Sorry I’ve watched a lot of videos and while the recipe is pretty consistent across the board but the techniques I think are where the magic truly happens, I’m glad you mentioned about crumbly icing. It’s easy to see you are an expert and have made a lot of Royal icing in your days. Thank you so much for sharing this!!! I look forward to more of your videos!❤️🥰🙏🏻🍁🇨🇦
Hi there ! After wanting to make proper iced cookies for 6 months, I finally decided to make a simple Christmas set today. I stayed up till 2am last night watchung your videos. Your icing recipe worked perfectly. I bought a 2nd hand dehydrator about 2 months ago and wow it worked so well to dry my cookies! Thanks for your awesome videos ❤
This is by far the BEST recipe. I've been making RI for years and started out with a meringue-based recipe and thought I was pretty happy with it. Once I began adding corn syrup I just couldn't get the right amount.....UNTIL NOW. Thank you so much for making my cookie decorating A LOT easier. It is easier to get the consistency I want from start to finish. Love all your video's and tutorials! thank you again.

Hi Lauren my friend loves the taste when I switched to your recipe so now it’s my go to. Great instruction. I do need to know how and when can I add flavor oils for a flavored icing other than vanilla. For example Carmel apple (apple and Carmel oils) please advise soon as you can. Thank you Connie

Hi Lauren ! Thank you for this video ! I purchased the recipe online but I noticed this TH-cam has different measurements for example the clear vanilla on the purchased download it says 1tsp . Not sure which measurements to follow . I did make a batch on the download recipe from your page but I noticed it tasted a lil sugar powdery for me. Does the taste change once it gets hard or should I mix the powder sugar longer ? Thank You 😊

I made this recipe twice and both times my icing would not dry!!! After looking at other recipes I noticed you use a lot more water than everyone else. It took 10 minutes for my icing to fluff up. Then there was more air than icing and it would not dry 😭😭😭😭😭😭😭
There could be a few reasons why your icing isn’t drying, but here are some of the most common problems you may be able to fix: make sure you have good air circulation, using a heat fan can help as well; there could be oil in your icing, maybe some left over on your mixer or bowl even that could cause it not to dry; did you use an emulsion that contains oils; could you have over-colored the icing and caused it not to dry. Checking these common problems may solve your issue!

It's not about an exact amount of time that you mix, you will want to mix until you get stiff peaks!

This icing doesn't dry. My cookies are sogy and thr day after decorating, I still can't package them.
