Spatchcock Garfunkel Chicken By Britt

    I’m doing a field trip to family friend Britt’s house in sunny Tucson, Arizona.
    Britt is a local tennis instructor and an avid barbecuer.
    Today he barbecues Garfunkel chicken. He starts by spatchcocking the chicken - It’s such a funny word to me 😂
    He then coats the chicken with olive oil and seasons with Parsley, Sage, Rosemary & Thyme and salt & pepper. Simple but delicious.
    Britt then barbecues the chicken on his Big Green Egg at 350 degrees F. for about 20 minutes per side. He shares what temperature he likes the chicken thighs and breasts to finish at for a crispy skin and juicy, tender meat.

    I can’t wait for winter to end so I can use my grill to make this delicious chicken . It snowed yesterday and temperature went down to minus 11 degree 🥶
