Just opened a jar of my chicken Barbacoa I made last week! It is full of flavor, sooo good! When I tasted the broth while making it, it seemed a bit too spicy but canned it’s just right! This will be a pantry staple. Thanks for another fabulous recipe!
So I’m getting out my ingredients to make this and realized there is not an amount for cumin and Mexican oregano on the recipe card. I will just put the amount I think I will like but you may want to add those two things to the card.
Jeni, can you help with info on the chilies in the recipe? Are they purchased dried? Fresh? I've canned a bunch of your recipes and I love them all. I've listened to this video several times. I just haven't been able to find the chili info
Thank you for providing the recipe on your website (great list of recipes overall). It really helps me to read through a recipe, and your website is well designed. This looks super easy to make, I think I will use the jar of chopped hatch chiles I got at Costco instead of the roasted poblanos, and fresh garlic instead of the cubes I don't have, and overall those are easy substitutions. Can't wait to try it! I have a lot of beef I want to move out of my freezer, and a lot of empty jars. This looks great.

I know you are having issues with your camera... How full were the jars? The camera angle didn't show that. Edit: Found it. This sounds so good, and not just for beef. Think it would work with pork and chicken.
She explains things so well it’s easy to follow along. I’m glad she still is making videos, not waiting till she gets a new camera. I have canned several of her reciepes and will be canning up this one too!

1 Tbsp cumin and 1 1/2 tbsp Mexican oregano.

Oops sorry, it’s on the recipe card.7 qts, 14 pints. I have 3 lbs chicken thighs so will make 1/2 this recipe.

No, canned chipotles in adobo and you can use some fresh roasted green chilis or canned green chilis.
I did explain it in the video and it is also included in the recipe.

Very awesome. I cut beef roast up into tips today but havent canned them yet !
They are super tender. It's my favorite of the meats we've done even though we use ugly chicken more. The pork butt is great too
