The convenience of canned ground beef cannot be overstated! I make sure I have it on my shelf at all times! I think that I will have to give your taco meat idea a try. I do my ground beef like this all the time! I love having the convenience of having it on hand for quick dinners. . :) I buy my ground beef in bulk, and keep a couple pounds of it out for things like burgers, and meat loaf, but other than that, it all gets canned up :) GREAT video. . I just canned ground beef for the first time last weekend. I love how quick and easy it makes dinner to have this canned on the shelf ready to go. I need to get more canned soon! Next time I will play around with seasoning some of it.
When I cook up my burger, I put all the liquid that cooks off into a stainless pan in the fridge.takes about 15 mins for the fat to solidify and then use the juice in the jars and add the Better than bullion and water. LOVE canned burger for many many meals. Kris in Orlando
Hi Jeni, just thought I'd pass on, your spice mix for your refried bean canning recipe is awesome on hamburger for tacos. Made nacho taco salad yesterday. Canned hamburger is great. So fast on a week night. Taste great as well. I used a jar from Oct 2020. It was perfect.
I’m with you. My husband doesn’t like it canned, I do. It’s great in tacos and quick. In cassarole no one is the wiser. It’s just a texture thing. I don’t break up the meat very much as I par cook.
My husband loves taco meat over French fries or fried potatoes, cheese,jalapeños and chopped onions. I had some left over from canning and I mixed it with rotini noodles and it made a great casserole. Sprinkled dried onion strips on top….yum

Jeni, I’m sending you virtual flowers today, because I know they are not allowed in the intensive care unit. My husband and I are both BT survivors. Last week, maybe on another one of your ground beef videos, you casually mentioned that some of your subscribers have attributed the lids failures on the lids we got last year to using vinegar to wipe the tops of the jars. I listened. But hamburger is greasy! So, I wiped my jars twice. First with vinegar, and a second time with HOT water, making sure I used a different part of the paper towel on each jar. I had 100% success with my Ball lids! First time ever. Thank you so much for the inspiration. 16 jars. I’m doing another 8 jars tonight. Holding you and your family in my heart.

I’ve got to can some taco meat, I’m in the middle of canning jelly and jam. I do love roast beef or stew beef with the pepperoncini peppers and some juice, so yummy. Definitely still have you and your family in our prayers and praying God guides the hand of the surgeon. Have a blessed night!!
I use tattlers which are another reusable lid. I use them in anything that I know is staying in my house. And I use the forjars lids on anything that might leave my house - like jams and jellies that I give as gifts. Because my tattlers are expensive and I don’t want to loose them! Lol.

Hmmm, I haven't done this in years, but when I first got married and we didn't have a microwave, my sweet MIL taught me how to defrost hamburger in the oven. Just a bit of water and some low heat. It was quite quick(like half an hour). I bet we could cook the hamburger that way too!
The first thing I ever canned was ground hamburger. I really like it canned and honestly, prefer it to just cooking hamburger on the stove. My next project is doing taco meat since I use that the most.

Oh my gosh I just made you taco meat. Did any get canned.... nope. It was eaten to fast. My homemade is a little different but the variety of paprika you have and Mexican oregano boosts the flavor. Thank you for sharing.

All were sealed when I put them away. The jars were in the house so stable temperature. So disappointing. Mine were tattlers.

Half of a canner load of fig jam did not seal using new to me forjars.even though I've canned for years and done this recipe for three years. I noticed your jar lifter and was wondering if you've ever experienced problems by using another type? I was worried when I saw how mine lifted the jars going in and out as it grabbed the ring and it was tighter at the part of the ring on top and looser on the bottom. I wondered then if it would push the seal up or in other ways loosen the seal - which is probably what happened. I've never had this many fails in all the years I've canned. But I'm hoping it was due to the lifter and not the lids as I have purchased so many of them. I've just said another prayer for you - thanks for all you do for me.
I’m so sorry that happened to you. I could be a bad batch of lids. I had that happen with a box of Kerr lids once. The jar lifter shouldn’t interfere with a seal. Thank you! ❤️
